Red Tricycle’s superstar Drea Lester was recently featured on Good Day Oregon sharing some fun ideas to make boring lunches more exciting! Click Here to watch the Video.

1.  Hummus Plate with pita, veggies, and cheese
This is a good choice for families with picky eaters. You can easily make your own hummus without Tahini, which sometimes is a flavor that pick eaters might not enjoy. To prepare simply place  1 can of beans, ¼ cup of olive oil, 1 tbsp lemon juice and 1 tsp cumin in a food processor or you can also use a hand-blender stick, and blend until you get a nice smooth texture. Pair this with sliced pita bread, cheese slices, and favorite veggies.

2. Turkey-Lentil Sandwich
Here is a nice protein packed alternative for a kid who eats everything. Lentils are an excellent source for iron and fiber as well. Mayo or mustard aioli pairs nicely with the turkey.

3. Vegetarian Option: Almond or sunflower butter and banana on lavash
This is a great no-meat option that still packs a filling protein punch. Lavash works well as an alternative to bread since it doesn’t get  soggy throughout the day. If you have a no-nut policy at your school you can use sunflower butter as a tasty alternative to nut butters.

4. Salmon and Cream Cheese Pinwheels
This is a great idea for fish loving kids and a great way to boost those brain building Omega-3’s! Spread a healthy amount of cream cheese on the lavash, place the salmon in the middle, roll it up making sure there is enough cream cheese at the end to seal it. Slice the roll into bite sized pinwheels. You can also add onions or tomato slices for variety.  Not a fish fan? You can substitute jelly or cucumbers for the lox.
