Brie Apple Cinnamon Quesadillas with Fig Salad

Get your kids in the kitchen so they can make their own dinner. This recipe courtesy of Amy of the Gourmand Mom and Kids Cook Monday will have your kids combining apples, cinnamon and brie to make a sweet and savory quesadilla.

Serves 6

Ingredients:
2 Granny Smith apples

1 tablespoon canola or vegetable oil or 1 tablespoon butter

1 teaspoon cinnamon

8 medium flour tortillas

1 8 ounce wedge of Brie cheese, thinly sliced

Honey, to taste

Method To make the quesadillas:

Adult: Peel the apples, remove their cores and finely dice. Preheat an oven to 350 degrees and melt the butter in a sauté pan over medium heat.

Together: Add the diced apples to the pan and cook 4-5 minutes, or until the apples are slightly softened. Sprinkle the apples with cinnamon, cook 1 minute more, take pan off of heat and set aside.

Kid: Lay 6 of the flour tortillas on a baking sheet. Spoon each laid out tortilla with equal parts sautéed cinnamon apples, then a layer of brie slices. Close each quesadilla with the remaining 6 tortillas.

Adult: Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese is melted and the tortilla is crispy. Use a pizza cutter or large knife to slice each quesadilla into 4 quarters.
