Braeburn and Granny Smith apples are sliced thin and piled high -- and definitely worth the trip. Executive Pastry Chef Jessica Ellington believes the secret to nailing this classic is attention to detail and respect for each ingredient. For example, the higher fat content in Ellington’s unsalted European-style butter makes the crust rich and plays off the sweet, tart filling. Whole pies are available year-round and you can get ‘em by the slice September through December.
