Looking for a way to spice up your usual chicken dinner? Give this super easy no stress lemon chicken a try. Delicious when paired with jasmine rice and sautéed veggies. You can even use the leftovers for sandwiches the next day.

4 lb roasting chicken

2 tablespoons olive oil

2 lemons cut in half


2 cloves of minced garlic

1 teaspoon dried parsley

1 teaspoon salt

½ teaspoon pepper

Dry chicken with a paper towel and tie the legs together with kitchen string. Place the lemons inside the chicken cavity. Rub one tablespoon of olive oil all over the chicken. Grease the inside of the crock pot with the other tablespoon of olive oil. Rub the seasoning, garlic, parsley, salt and pepper all over the chicken and place it into the crock pot. Cook on high for one hour, and then cook on low for five hours. Enjoy!
