Food blogger, mom of three and regular TODAY food contributor, Siri Daly is all about making parents’ lives a bit easier in the kitchen. Here she shares with us her recipe for Grilled Cheese Roll-Up Dippers.
The 411 from Siri: East coast winters have been known to produce many a blizzard. Last year, on one particular snow day, I grabbed my skis (nope) and trekked over to my neighbor Jen’s house to keep her company. Her teenage daughter had an army of friends over to celebrate no school, so I sat in her kitchen while she cranked out snack after snack, hot tomato soup and these Grilled Cheese Roll-up Dippers. The recipe is simple, but they’re such a fun twist on traditional melted cheese sandwiches. Here, they are served with an easy, flavor-rich marinara dipping sauce. They make the perfect kid-friendly lunch or snack and with simple, minimal ingredients, you can churn out a bunch the next winter day you are stuck indoors with a million children.

For the Marinara:
2 tablespoons olive oil
2 garlic cloves, minced
1 1⁄2 tablespoons tomato paste
1 (14 1⁄2-ounce) can crushed tomatoes
2 tablespoons chopped fresh basil
1⁄2 teaspoon kosher salt
1⁄2 teaspoon black pepper
For the Roll-up Dippers:
12 soft whole-wheat bread slices, crusts removed
6 tablespoons salted butter, softened
12 American, Muenster, or Cheddar cheese slices
1. Make the Marinara: Heat the oil in a saucepan over medium. Add the garlic, and cook, stirring constantly, for 1 minute. Add the tomato paste and cook, stirring constantly, for another minute. Stir in the crushed tomatoes, reduce the heat to low, and simmer for 10 minutes. Remove from the heat. Stir in the chopped fresh basil, salt, and pepper; cover to keep warm.
2. Make the Roll-Up Dippers: Heat a griddle or nonstick skillet over medium. Flatten the bread slices with a rolling pin. Spread 1 1⁄2 teaspoons of butter on 1 side of each bread slice. Place the bread slices, buttered sides down, on wax or parchment paper. Top each with 1 cheese slice, and roll up the bread; place on the wax paper, seam sides down.
3. Place the Roll-Ups on the preheated griddle, seam sides down, in batches. Cook, turning with a spatula to brown all sides, until the cheese is melted, about 4 minutes. Serve immediately with the Marinara dipping sauce.
