On February 6, the lives of people living in Everett were changed forever. That was the day that Despi Delite Bakery moved into town. And while that might sound a little extreme, once you’ve tasted their wares (and their purple ube-filled doughnuts, pastries and breads), you’ll be a believer too. Read on for the delicious deets.

A Family Business
While this bakery is new to Everett, it is actually the second location using the Despi name. The original has been serving the Beacon Hill neighborhood for over 20 years. The Everett location is run by Christian Despi and his wife Melissa, two of the friendliest people who you will ever meet. Christian says that he didn’t have much of a choice but to get into the family business and practically grew up in the Beacon Hill bakery working every Saturday. He’s the third generation to carry on the bakery tradition. According to his wife, Christian makes the trek from Renton every day and arrives ready to start baking at about 2 a.m. Everything you see is a work of art and it is all created by him says Melissa.

You Must Try the Ube-Filled Doughnuts, Pastries & Breads 
The Despi doughnuts rival those of larger chain shops in the area. You won’t find a larger maple bar (with or without bacon) anywhere and the apple fritters are nice and crispy on the outside while soft and squishy on the inside. In addition to the large selection of doughnuts, you’ll also find delicious cream-filled pastries, tarts and pies. But what is most unique is the ube-filled doughnut. At first glance the doughnut appears to be stuffed with a sickening sweet purple-hued frosting, but It isn’t. It’s actually a ube custard and a very tasty treat!

More Than Just Doughnuts 
Ube breads, pastries and cakes is what makes the Despi Bakery stand out. Ube is actually a purple-colored yam that is used primarily in Filipino baking and is very pretty to look at. But there are more than just sweet stuff to choose from at Despi. They also have a variety of savory items including chicken empanadas, ham and cheese croissants, “pigs in a blanket” and a Filipino pastry called hopia that is filled with a pork filling and “is a little on the sweeter side,” according to Melissa. They also have a nice selection of Filipino breads. For special occasions, Christian can work his magic creating beautiful, custom designed birthday and wedding cakes.
