This simple dish is the perfect compliment to your summer cookout. It’s easy to make, is full of protein, and you can make it in large batches for dinner parties. Because this recipe is so simple, it’s easy to adapt or change depending on what you have available. Feel like kicking it up a notch? Try adding Serranos or Jalapeños to the mix, or some carrots and bell peppers for a little extra crunch. This is one dish that you can feel good about going back for seconds.

2 c. cooked black beans, or 1 15 oz can, rinsed and drained
2 c. fresh steamed or frozen sweet corn
1 red pepper, chopped
1 yellow pepper, chopped
2 scallions, sliced
1 c. cherry tomatoes, halved
1 avocado, diced (optional)
1/4 c. fresh cilantro, finely chopped
3 Tbsp. extra virgin olive oil
3 Tbsp. fresh lime juice
3/4 tsp salt
1/4 tsp fresh ground pepper

1. Combine salad ingredients (through cilantro).

2. In a small bowl, combine oil, lime juice, salt and pepper.

3. Pour over salad and toss gently to mix.
