Here’s how to bring some Mediterranean flair into your kitchen with hardly any effort. This recipe for lemon chicken pitas couldn’t be any simpler–just marinade the chicken mixture overnight, then pop it into the crock pot in the morning. The whole family will be happy to dig into these tasty pitas, and you won’t even break a sweat.
1 – 1 1/2 pounds chicken breast
Zest and juice of 1 lemon
1 tsp garlic
1 tbsp olive oil
Salt and pepper
1/2 cup chicken broth
Chopped tomato and red onion (optional)
1. Place chicken breasts in a Ziploc bag. Add the lemon zest and juice, garlic, olive oil, salt and pepper. Let marinate for 8-24 hours so all the lemon gets absorbed into the chicken.
2. Put chicken mixture into the crock pot along with the chicken broth. (Water is okay too; just something to keep the chicken from drying out when it’s cooked.) Cook on low for about 6 to 8 hours, until the chicken shreds like the above photo.
3. Serve the lemon chicken with tzatziki sauce piled onto a piece of warmed pita bread. Add chopped tomato and red onion if desired.
