The minute you step foot in the door of this immaculate, bright, cuter-than-cute “bundtique”, you’ll wonder how you survived in this city so long without it. But don’t judge a book by its cover . . . judge it by its cake.
Their claim of using the purest ingredients, from fresh eggs to real butter and cream cheese, is confirmed when you take your first scrumptious bite. And you can take a lot of first bites with all the flavors to choose from: Red velvet, chocolate chocolate chip, lemon, marble, pecan praline, carrot, white chocolate, cinnamon swirl and white chocolate raspberry are available every day, while their feature flavor changes every thirty to sixty days. There’s even a gluten-free chocolate chip cookie bundt that they can barely keep on the shelves. All cakes are topped with a thick, creamy, absolutely decadent cream cheese frosting.
Each flavor is as delicious as the next, so you might find yourself with a case of buyer’s indecision, but don’t despair! The cakes come in four sizes, including bite-sized “bundtinis,” which are sold by the dozen so you can try them all! A-bundt the Owners
Nothing Bundt Cakes is the brainchild of Dena Tripp and Debbie Shwetz, two friends who made delicious cakes for friends and family in their own kitchens. Recognizing there was a serious lack of readily available, delicious cakes that didn’t compromise on their ingredients, they opened as a small niche bakery in Las Vegas and began franchising in 2006.
Erika Young, co-owner and operator of the Lincoln Park location, first heard of Nothing Bundt Cakes about a year ago. A Chicagoan on-and-off for 18 years, Erika Young had been happily working as a Global Marketing Manager for United Airlines, planning and facilitating events. But, as she puts it, “Food is in my blood. I grew up baking with my Italian aunts and Grandma, and I always thought I’d like to open a dessert or coffee bar.”
Erika’s business partner had spent Easter at his sister’s house in Phoenix, where he tasted his first Nothing Bundt Cakes cake and was blown away. Meanwhile, Erika hosted Easter dinner at her condo in River North, where she served individual pistachio bundt cakes to her guests. She gave the leftover bundts to her business partner’s family upon their return to Chicago (so she wouldn’t eat them all herself), which they found to be very similar to the amazing bundts they had in Phoenix.
Just a happy coincidence or a sign of what was to come? Who knows. But the pair visited every Nothing Bundt Cakes store in the Chicago suburbs the next day, and the wheels began to turn. Young found the business concept alluring – focus on one unique idea and do it very well.
Let Them Eat Bundts
Erika chose the Lincoln Park location because it fits the franchise’s business model so well. With free parking and lots of neighboring schools and churches, there is plenty of opportunity not only for walk-in business, but also larger-scale catering, as well as the charitable side of owning a business. She wants to get involved with local schools and churches and be knowns as “the cake celebrity” of her territory. With Lincoln Park as the test, they’re hoping to open 1 or 2 more stores in other parts of the city, with potential pop-up locations in tourist-laden areas. So eat up and keep your eyes open for more locations in the future.
