We love recipes that can be prepped without having to turn on the oven. Even better are recipes that can be made with ingredients we have without having to make a special trip to the supermarket beforehand. That’s why this chicken and rice casserole is sure to be a big hit and a definite recipe repeat. For a more substantial dish, add some carrots, green beans, or peas to the dish to make it a little more veggie-ful.
3 tbsp salad oil (optional)
1/4 tsp garlic salt
1 1/2 c chicken, cooked and diced
1 c uncooked rice
1/8 tsp pepper
2 c hot water (or chicken broth)
1 1/2 c spinach, shredded
2 tbsp soy sauce
1. Combine all the ingredients except the greens – bring to a boil, reduce heat, cover and simmer 15 minutes.
2. Just before serving, add the spinach and toss lightly.
