If you have a picky eater, Arroz con Queso might be a nice alternative to mac and cheese (and let’s face it, it sounds a whole lot more exotic). Following is a basic recipe that can be easily modified. For example, you can scale back the chili peppers for delicate little taste buds. Serve as a main dish, topped with shredded cheese and fresh roasted corn on the side, or as a side dish next to a roasted chicken that you picked up from the supermarket. Easy!
1 1/2 cups long grain converted rice, uncooked
1 onion, chopped
1 cup cottage cheese
4 ounces green chili peppers, canned
2 tablespoons vegetable oil
3 teaspoons garlic, minced
2 cups Monterey Jack cheese, grated, divided
Salt to taste
1. Mix all ingredients except for 1 cup of grated cheese in the slow cooker.
2. Cover; cook on Low for 6-9 hours.
3. Sprinkle with remaining cheese before serving.
