Produce Pick: Summer Squash

In her cooking, Linda says that she's influenced by a mix of Chinese, Malay and Indian cuisines, but living in the midwest she's learned to use her cooking creativity to adapt recipes from the old country by taking advantage of local seasonal ingredients. And, when she visits the farmers market during the summer she's drawn to summer squashes like zucchini and yellow squash because "they are so fresh and plentiful." She offered up two recipes that take advantage of summer squash: Pan Fried Summer Squash with Rosemary and Spiral Vegetable Tian (pictured here).
