Grilling up chicken is the perfect way to make you remember warmer weather, longer days, and great eats. But this dish can be enjoyed all year long if you have a grill pan you can throw on top of your stove top. Chop up some tomato and cucumber and you’ve got a salsa-variation that gives the chicken a little extra flavor. Our suggestion? Add some avocado to the mix just to make the salsa that much more delicious. The best part? It only takes 30 minutes to prepare, so you’ll be enjoying this dish before your kids can ask “When’s dinner gonna be ready?”

Yield: Serves 4
4 boneless skinless chicken breasts
oil as needed
1 medium tomato, seeded and chopped, about 1/2 cup
1/2 small cucumber, peeled, seeded and chopped, about 1/4 cup
2 tbsp finely chopped onion
2 tbsp finely chopped fresh cilantro
1 tbsp lime juice
1/2 tsp salt
1. Heat grill over medium flame.
2. While grill heats, toss together tomato, cucumber, onion, cilantro, lime juice and salt. Refrigerate for 30 minutes.
3. Brush chicken breasts with oil and grill until no longer pink; about 7-8 minutes per side.
4. Drain salsa if necessary and serve over chicken.
