With only five ingredients and three steps, making this meal almost every week is a no brainer for Red Tricycle Editorial Director, Erin. She loves the simplicity of this meal and using fresh herbs to coat the chicken. Change up this dinner with various side dishes like rice, orzo or potatoes.

Ingredients:
4 chicken legs and thighs
1/4 cup of extra virgin olive oil
2 cloves of minced garlic
fresh minced herbs (thyme or rosemary, depending on your preferences)
salt and pepper

Method:
1. Heat oven to 375 and cover a baking sheet with foil (this will help minimize your clean-up later).

2. Combine the last four ingredients in a cup and mix together. Using your finger, slather the mixture underneath the chicken skin and coat evenly.

3. Put chicken pieces on the foiled baking sheet skin side up and baked for 40 minutes or until done.
