Welcome back to another episode of Lazy Trader Joe’s Meals. Today, we are making this simple and delicious Chili Cheese Pasta. Here’s everything you need to make it: 1 lb pasta of your choice (I am using the Organic Fusilli Corti Bucati pasta) ¼ cup dairy-free cream cheese 2 cans of organic vegetarian chili 2 handfuls of dairy-free shredded spicy Mexican-style blend ¼ cup of organic frozen spinach, defrosted Green onions, for garnish (optional) Organic corn dippers, for garnish (optional) Prepare your pasta according to package instructions. Once the pasta is cooked, drain it and add it back into the pot. On low heat, add both cans of chili and mix. Add the cream cheese and mix through until melted. Add the spicy cheese blend and mix until melted, and finally add in the spinach. Serve with either green onions, organic corn dippers, or both. Kicking off my new series: 20 Minute Trader Joe’s Meals with MEDITERRANEAN CHICKEN MEATBALL TACOS 🌮 What you’ll need from Trader Joe’s: – Pre-cooked chicken meatballs – Harissa – Tortillas (I used the “carb savy tortillas made with whole wheat) – hummus – slaw mix – cucumber – tomato – red onion – tzatziki (or you can make your own using Greek yogurt, lemon juice, minced cucumber and dill) Directions: 1. Heat some olive oil in a pan on medium heat. Add the chicken meatballs with about one tsp of harissa (or more if you like spice). Saute for a few minutes until the meatballs become golden brown. 2. Starting with the tortilla, build your taco by layering hummus, slaw mix, harissa meatballs, cucumber, tomato, red onion and tzatziki. 3. Here’s what you need: – plain pizza dough – tomato basil marinara – chickenless crispy tenders, cooked on the low end of the package instructions and chopped into small pieces – dairy-free mozzarella and parmesan – 2 tbsp dairy-free butter – 1 tbsp minced garlic 1. preheat oven to 450 degrees F. 2. let pizza dough come to room temperature and roll it out into a large rectangle 3. spread a thin layer of marinara leaving about 1/2 inch of room around the edges of the dough. 4. add the cooked and chopped chickenless crispy tenders, and both dairy-free cheeses on top. 5. carefully roll up the dough into a log and slice it into one inch pieces (Refrigerating the roll for 30 minutes before cutting will make it a little easier to cut if you don’t have a sharp serrated knife). 6. melt the dairy free butter and mix in the minced garlic. 7. place sliced chicken parm rolls on a prepared baking sheet about an inch apart and coat each piece with the garlic butter. 8. bake for 15-20 minutes or until golden and cooked through. 9. top with dairy free parm and serve with extra marinara. You’re going to want to sit down as we’re combining two of our favorites—Trader Joe’s and sheet pan dinners—for the ultimate easy dinner option. For most of these “recipes” (and we use that term loosely) all you have to do is cover your sheet pan in foil, preheat the oven, and dump your favorite Trader Joe’s items on the pan to bake. The best part is that they’re no active cooking and you can typically bake these at anywhere from 350-425 degrees (just by adjusting the cooking time), perfect for when you want to add some rolls or other items to go along with them.

Mini Gnocchi + Spinach Artichoke Dip + Cherry Tomatoes

You can find these mini gnocchi in the fresh food section and the spinach artichoke dip in the freezer. Drizzle your pan with olive oil, dump the mini gnocchi and tomatoes in the pan, add a few cubes of frozen garlic along with some salt and pepper, and plop the artichoke dip into the center of the pan. Bake until the tomatoes burst and the dip has melted. Add a little stock or cream to loosen up the dip and stir to combine. You don’t even have to boil the gnocchi before baking; it’s that easy!

 

Broccoli + Unexpected Cheddar Chicken Sausage + Cauliflower Gnocchi

If your family members are fans of the cult-favorite Unexpected Cheddar, then this dinner will make them happy. Cut the pre-cooked sausage into half moons and then dump them on a foil-lined cookie sheet along with cauliflower gnocchi and broccoli florets. Bake at 400 degrees until the gnocchi is done to your liking, around 20 minutes. Give it a stir once or twice so everything browns evenly.

 

Shawarma Chicken Thighs + Sweet Potato Frites + Naan

If your crew can handle a little bit of heat, this option could not be easier. Cover your sheet pan in foil and put the shawarma chicken on one side and the sweet potato fries on the other. Follow the package instructions for cooking the fries. Your chicken should be cooked through by the end of this process but check the internal temp for doneness. Shrimp + Asparagus + Lemon

Set your oven to 400 degrees and run the shrimp under water in a colander until they have defrosted. Dry them with a paper towel and place them on a cookie sheet with some olive oil. Add a package of frozen asparagus spears or fresh asparagus and spread them out on the pan. Slice a lemon thinly and place the slices over the shrimp and asparagus. Bake until the shrimp are cooked through, about 8-10 minutes. Squeeze another lemon over everything and serve.

A piece of salmon is pretty much the easiest thing you can bake, trust us. Pick up some salmon filets from the fresh meat section and a bottle of the new salmon rub seasoning. Cover your pan with foil and drizzle a little olive oil on it. Place your salmon skin side down and sprinkle with salmon seasoning. On the other half of your pan, spread out the colorful carrot coins. Bake at 425 degrees for 12-15 minutes until the salmon is cooked through. Serve with rice.

 

Peppercorn Garlic Boneless Pork Tenderloin + Cauliflower Gnocchi + Haricots Verts

We love this pork tenderloin as it cooks up in no time. Start by searing it in a hot pan and then transfer it to a sheet pan with your cauli gnocchi and haricot verts. Add a little olive oil and garlic powder/salt/pepper and bake at 425 until the pork is cooked through, usually no more than 20 minutes. The gnocchi and green beans will come out nicely browned and the pork flavorful.

Santa Maria Style Tri Tip Roast + Chimichurri Sauce + Brussels Sprouts

The cooking instructions for this roast say to cook it at 425º for 30-45 minutes and that’s the perfect amount of time to get some nice roasted Brussels sprouts going. Cut the ends of the sprouts off and then cut them in half before placing them on a sheet pan with a drizzle of olive oil. Add the roast to the pan and cook until the roast is done, giving the Brussels sprouts a stir once during cooking. Serve with a drizzle of chimichurri sauce and a warm baguette.

 

Grass Fed Beef Sirloin Roast + Mashed Potatoes + Lemon Arugula Basil Salad

If you recently welcomed a new baby, your life has probably been turned upside down. From physical and emotional exhaustion, and the challenges of recovering from labor, to those wild hormonal shifts (seriously, why am I crying one minute and laughing the next?), your body takes a serious toll. And did we mention there’s still a tiny living creature to take care of? With all that chaos, self-care usually takes the backseat, especially when it comes to feeding yourself. But during this recovery phase, a nutritious postpartum diet is crucial, and certain foods can play a key role in helping you heal and regain your strength.  

The best postpartum foods to eat are ones that provide essential nutrients to support your recovery. Not only do they nourish and give you energy, but they also offer ample calories to keep you satiated between newborn feeds (and cuddles). As a dietitian, I recommend these 7 foods to support new moms and help them feel their best.

1. Salmon

Salmon is a top pick because it’s packed with omega-3s to help reduce inflammation, and lean protein to assist in repairing stretched and torn tissues. When you’re in a pinch, try roasting it with garlic salt, pepper, and a drizzle of olive oil. Or whip up some quick salmon rice bowls by baking it with teriyaki sauce, sesame oil, and fresh garlic. If you have an air-fryer, try this drool-worthy salmon bites recipe (the cook time is less than 10 minutes!).

Nuts are the ultimate no-fuss power snack, packed with healthy fats and protein. Plus, they’re calorie-dense, and postpartum moms need those extra calories to support recovery. Slather peanut butter on toast, dunk apple slices in creamy almond butter, or toss a handful of nuts into a salad for a satisfying crunch. If you’re craving some comfort food, incorporate nuts into dishes like Thai peanut curry and cashew chicken, or use this peanut butter sauce as a marinade for proteins, a salad dressing, or a dipping sauce for spring rolls. 

4. Beef

Whether you prefer ground beef, skirt steak, or brisket, they’re all fantastic sources of iron which helps replenish blood loss from labor. My fave method for cooking beef is using the Crock-Pot or slow cooker—just toss it in, forget about it, and it’s ready for dinner. Try making beef stew, spaghetti bolognese, or this easy slow-cooker brisket recipe, which are all nutrient-rich options that require minimal effort. 

If you’re looking for vegan foods that are iron-rich, add beans, lentils, tofu, and quinoa into your meals. I love this simple slow-cooker Mediterranean lentil stew and this stir-fry recipe that includes both tofu and quinoa.

5. Eggs

Not only are eggs one of the most affordable animal proteins, but they’re also among the quickest to prepare. They’re rich in protein, vitamin D for immune support, and choline which supports brain development in breastfed babies. Enjoy them hard-boiled, scrambled, or poached, or incorporate them into dishes like veggie fried rice or Middle-Eastern shakshuka.

6. Avocado

7. Greek yogurt

I’m a big fan of Greek yogurt because it’s packed with protein and serves as an excellent source of calcium, which is crucial for replenishing lost stores during pregnancy and maintaining strong bones. Opt for unsweetened varieties, and if you’re craving a touch of sweetness you can always add a drizzle of honey or maple syrup. For a quick and delicious breakfast option, throw together a breakfast parfait with alternating layers of Greek yogurt, berries, and granola. And if you find yourself with some extra time between naps, experiment with recipes like a berry yogurt bake or this creamy Caesar salad-dressing alternative

If you think adding salmon to your weeknight dinner rotation will be a bust (kids won’t eat it, don’t know how to cook it, too fancy for weekdays), think again.
