If you think that Pasta Carbonara is a dish you can only have in restaurants, you’ll be shocked to see how simple making it really is. Here to break down the steps for any home cook are Gayle Pirie and John Clark, Chefs and Co-owners of Foreign Cinema in San Francisco. Read on for the full recipe.

Ingredients for Pasta Carbonara:

1 pound (or just under) long noodles (spaghettini, fettucini, or linguine)
6 thick slices of smoky bacon
2 Tablespoons pure olive oil
4 eggs
Salt to taste
A chunk of Parmesan cheese, freshly grated
Freshly ground black pepper to taste

Method:

1. Bring lightly salted water to a boil in a large pot. Cook the noodles until tender but firm.

2. While the noodles cook, dice the bacon and cook it in the olive oil until just lightly crisped in a medium sauté pan. Pour off the excess fat, reserving 4 tablespoons in the pan.

3. In a bowl, beat the eggs and season with a little salt.

4. Drain the noodles, saving about 2 tablespoons of water for later. If the pan has cooled down, warm it up again right before adding the noodles.

5. Add the noodles to the warm bacon in the pan; thoroughly toss with the oil and bacon, and season with salt. Work fast and pour the beaten eggs onto the warm noodles and mix well to coat the noodles.

6. Add the reserved pasta water if the noodles look dry. The heat of the noodles and the pan will thicken and set the eggs. If there is not enough heat, turn the burner on very low, just to warm the noodles, then turn it off. Too much heat can scramble the eggs.

7. Once the noodles, egg, and bacon are well mixed, add freshly grated Parmesan cheese, and stir. Freshly ground black pepper is an essential addition. Serve in warm pasta bowls.

Great for family barbecues (or picky pasta eaters) this quick pasta dish takes minutes to throw together and only requires four ingredients—all of which we’re willing to bet you have in your pantry. Rebekah of PDXfoodlove is a big fan of the simple combination of high-quality mayonnaise and freshly ground black pepper. This rich combination really makes the recipe pop. Originally created as a side dish, this Hawaiian Pasta Salad is a must-have recipe for summer. This recipe yields two small servings. You might want to double or triple it if you’re feeding some especially hungry kiddos.

Ingredients for Hawaiian Pasta Salad:

1 c (dry) small pasta, such as shells or elbow macaroni
3 tbsp excellent quality mayonnaise
1 tbsp milk
Lots of freshly ground black pepper

Method:

1. Cook the pasta according to the package directions, and allow it to cool down a bit so as not to curdle your milk. In the meantime, mix the mayo and milk together with a fork to create a mixture a little thicker than say, ranch dressing. You can add milk or mayo to your preference.

2. Stir the two together, and then season with a very very large amount of freshly ground black pepper.

This is a simple and delicious recipe the kids can help make

30-minute meals are the best. This recipe comes together quickly, which means you can spend your evenings doing things that matter like building forts and playing hide-and-seek. In fact, we found that the longest part of the prep work for this pasta dish was getting our water to boil. Tell us below what you think of this pasta with peas and bacon dish!

Ingredients for Pasta with Peas and Bacon:

16 ounces fettuccine (or whatever pasta you prefer)
3 strips of thick-cut bacon
1/2 onion, chopped
1 (10-ounce) bag frozen peas
2 cloves garlic, minced
1/4 cup grated Parmesan
Salt and freshly ground black pepper
1/2 lemon, juiced

Method:

1. Bring a large pot of salted water to a boil over medium heat. Add pasta and cook until al dente. Drain pasta, reserving 1 cup of pasta water.

2. Meanwhile, saute bacon in a large saucepan over medium-high heat until golden and crisp, about 6 minutes. Transfer to a paper towel-lined plate and break up into small pieces.

3. In the same pan, saute onions until softened, about 5 minutes. Add peas and garlic and saute for 3 minutes. Stir in Parmesan cheese, pasta, and bacon.

4. Moisten pasta with some of the reserved pasta water. Toss to incorporate, season with salt and pepper, if necessary, and serve, sprinkled with lemon juice.

Get ready to be blow away. This recipe is the brainchild of Ramona at Kitchen Simmer, and it combines two of your kids’ favorite foods: spaghetti and hot dogs. Yes, really. Add in veggies like onions and bell peppers and the result is a delicious hearty meal that requires only one pot. Hooray for one-pot, easy clean-up meals!

Spaghetti hotdog Good Cook

Ingredients:
1 packet of hot dogs (I used good quality all beef hot dogs with no nitrates)
1 medium onion chopped (save some for garnish)
1 green bell pepper chopped (save some for garnish)
1 large jar of prepared spaghetti sauce
2 cloves garlic grated
1 tsp dried basil
1 tsp dried oregano
1 tsp sugar- if needed
red chili flakes to taste
salt and black pepper to taste
2Tbs canola oil

Garnish: Diced bell pepper, onions, Parmesan cheese

Method:
1. Cook pasta in well-salted water according to package directions. Drain and set aside in a colander. In the same pot, you cooked the spaghetti, heat 2 Tbs canola oil and saute onions and bell pepper with a little salt over medium heat.

2. When onions begin to soften add garlic, black pepper, dried oregano, dried basil and red chili flakes. Saute for another 2 minutes. Next, add the cut up hot dogs and saute for 2 minutes.

3. Next add jar pasta sauce, sugar (if needed) and adjust salt. Simmer with lid on for 15-20 minutes on medium-low heat. Finally, add cooked pasta and toss well in the sauce for 2-3 minutes. Garnish with onions and peppers. Enjoy.

It’s been a long day and a slice of pie for dinner sounds delightful. You consider the local options that accommodate your family’s plant-based diet and feel disappointment descend. Then you remember a friend mentioning a new alternative pizza joint opening on SE Division this past summer and you feel a spark of hope. There’s a reason for vegetarian and vegan families to feel excited about the recently-opened Virtuous Pie. This family restaurant is serving up dinner options that will make you want to eat out (or delivery) every night. Read on to find out what’s on the menu tonight.

A Virtuous Vision

Virtuous Pie is a Vancouver, BC-based restaurant founded in 2015 with mission of promoting the plant-based diet by creating food options that are affordable, fast and delicious. The goal is to promote positive change with food that is both good for the body as well as the planet.

The dining experience focuses on pizza and ice cream, but you can also enjoy salads and a variety of sips. They even have weekend brunch menu that includes breakfast tacos, sandwiches, bowls and calzones. Delizioso!

The Atmosphere

Virtuous Pie goes out of its way to provide an inclusive environment where everyone feels welcome. The staff is exceptionally friendly and there is a family-style eating area in the middle of the diner, and bar and window seating as well. The building is spacious with high ceilings that help hide the noise littles with big voices often have. As we mentioned above, if your kids’ appetites won’t allow them to sit and wait, you can always call in for delivery and enjoy your favorite pie in the comfort of your own home.

Dinner

The vast majority of the food served at Virtuous Pie is hand crafted and made in-house. The wide variety of pizza options offered is almost as shocking as how incredibly good they are. The Meatball + Chevre Pizza($14) tastes a whole lot like a traditional pie. The kids are sure to love it and you are bound to wonder if the cheese isn’t actually cheese made from dairy. The answer is, “no”! The cheese is nut-based and made in-house as is their three-day dough, which makes incredible crust—not too thick and not too thin.

Some additional slices you should consider giving a try are the tasty Margherita ($10) with it’s San Marzano tomato sauce, cashew mozzarella and fresh basil. This pizza is flavorful but mild-enough that young palates can enjoy it. Stranger Wings ($14), on the other hand, is flavorful, spicy and reminiscent of chicken buffalo wings with all of the buffalo in a crispy fried cauliflower topping—just what the parents needed.

Good news for the gluten intolerant, Virtuous has kept you in mind. You can order your pizzas with Gluten-free crust. Now that’s something to celebrate.

Dessert

It’s hard to believe you can get full-flavored, creamy ice cream with out even a dash of milk in it, but Virtuous delivers in the frozen dessert department. Choose from a list of options that includes Pumpkin Pie + Pecan, Hawaiian Vanilla, Mint+ Dark Chocolate, Lavender + Lemon, Double Chocolate + Salted Caramel, and our favorite: Turmeric + Black Pepper. That’s right! Turmeric + Black pepper makes for a beautiful yellow scoop that is surprisingly sweet and sure to bring smiles.

If they all sound too good to pick just one, order up a flight ($8) and pick three scoops to enjoy. You may even want to splurge and take pint ($11) home. Another treat on deck is their Ice Cream Sandwich ($8). You’ll love the modern twist on this classic favorite.

Sips

Round out your meal with some local sips. Virtuous has Kombucha on tap ($4/Glass), Heart cold brew ($4), craft soda by Fentimans ($4), and coconut water ($3). On the boozy side they offer wine, beer and cider on tap as well as cans of beer.

Insider Tip: This is a big one…you don’t have to be vegan or vegetarian to enjoy this restaurant! Their pies will please foodies with all dietary leanings. Go ahead meat-eaters, give it a try. You’ll thank us.

In Partnership With Eggland’s Best

Take things a bit further with your Shakshuka and add delicious vegetables!

Prep Time 10 min  Cook Time 25 min  Yield 4 servings 

You will need:

2 tbsp. extra virgin olive oil

1 medium onion, diced

3 cloves garlic, finely diced

2 tsp. paprika

1 tsp. ground cumin

½ tsp. cayenne pepper (or to taste)

½ tsp. cracked black pepper

½ tsp. turmeric

2 tbsp. tomato paste

1 small eggplant, peeled and diced

2 poblano peppers, diced

1 cup diced Portobello mushrooms

1 28 oz. can crushed tomatoes

Salt to taste

4 oz. feta cheese

5 large Eggland’s Best eggs

Directions:

Heat a large cast iron skillet on medium high.

Add the oil, then the onions, garlic, paprika, cumin, cayenne pepper, black pepper, and turmeric.

Cook just until the spices become fragrant, then add the tomato paste. Cook for about an additional 1 – 2 minutes.

Add the eggplant, poblano pepper, and mushrooms and cook until the vegetables are softened.

Add the crushed tomatoes, and salt (you may not need much as the feta is quite salty) then cook for another 4 – 5 minutes.

Add in the feta cheese in small clumps throughout the mixture. Make sure the cheese is submerged into the tomato sauce.

Create 5 wells in the pan and add the eggs into the wells.

Lightly run your spatula into the whites to break it slightly and allow it to incorporate some of the tomato. Leave the yolks whole.

Cook for about 2 – 5 minutes, depending on how hard you want the egg whites.

Cover and cook for 1 minute to lightly cook the top of the egg whites, but not much longer, or else you risk cooking the yolks.

Sprinkle a pinch of salt and pepper over the eggs and serve hot with a side of bread.

Whether you’ve been lucky enough to get a peek inside the gorgeous new (opened to the public in Sept. of 2016) National Museum of African American History and Culture or not, you’re likely privy to the fact that it’s the kind of institution that will take most visitors on an emotional roller coaster. The stunning building, inspired by Yoruba art and filigree ironwork, is filled with presentations and artifacts that give visitors a glimpse at all aspects—the good and the gut-wrenching—of the African American experience. It’s a must-visit for the entire family, but here’s a cheat sheet on the exhibits and features that will resonate most with your kids (FYI: Most of these are located on the museum’s top floors).

Stop #1: “Cultural Expressions” (fourth floor)
The perfect jump off point, this exhibit introduces the concept of African American and African diaspora in a way that kids can understand. It touches on style (clothes, dress, hair, and jewelry), food, social dance, and language.

Stop #2: “Musical Crossroads” (fourth floor)
Even your littles music lover will enjoy wandering through this exhibit that tells the story of African American music from hundreds of years ago to today’s hip-hop. This gallery is organized by musical genre rather than chronologically, covering classical, sacred, rock ’n’ roll, hip-hop and more. If you don’t have time to see (er, hear) it all, go to your families favorite music style first. Some of the must see artifacts in this area include Chuck Berry’s red Cadillac and Louis Armstrong’s brass-and-gold trumpet circa 1946.

Stop #3: “Taking the Stage” (fourth floor)
Mini theater buffs will learn a thing or two about the history of African Americans on stage, film and television, and how these performers paved the way for social change. A couple of the many stories told in this gallery include Paul Robeson’s role in Othello and the Black Stuntmen’s Association in Hollywood.

Stop #4: “Sports Gallery” (third floor)
The sporty set in your crew won’t want to leave without swinging by this exhibit, which looks at all of the contributions from African American athletes on and off the court. Some of the coolest  Types of artifacts on display include sports equipment; awards, trophies and photos; training logs and playbooks; and posters and flyers. A grip bag and uneven-bar grips used by African American gymnast Gabby Douglas in the 2012 Olympics, a white terrycloth robe worn by Muhammad Ali and the track shoes and gold medals of Carl Lewis are just a few of the items on display.

Stop #5: Sweet Home Café (basement level)
When tummies start to rumble, head to the museum’s on-site eatery, showcasing the culture of African American people through food. The café features four regional stations: Agricultural South (think: Buttermilk Fried Chicken with Black Pepper Cornmeal Waffles), Creole Coast (think: Gulf Shrimp & Anson Mills Stone Ground Grits), North States (think: New York City Oyster Pan Roast), and Western Range (think: Pan Roast Rainbow Trout).
