Everyone has that go-to dinner meal when time is limited and tummies are rumbling. The best part? This mustard and maple syrup glazed chicken recipe only requires four ingredients. The sweetness infused by the maple syrup appeals to those with sweet tooths (and picky eaters!). If you’re more about the bite and less about the sweet flavor, be sure to load up the glaze with mustard. Either way, you won’t be disappointed.

Ingredients for Mustard and Maple Syrup Glazed Chicken:

6 boneless, skinless chicken thighs (you can use bone-in too)
one large shallot, minced
3 tablespoons of real maple syrup
1 1/2 tablespoons Dijon mustard with seeds

Method:
1. Pre-heat broiler. Sautee shallot with olive oil over medium heat in a saucepan. Salt and pepper both sides of the chicken on a foil-covered baking sheet.

2. After shallot softens (about 1-2 mins), add maple syrup and mustard until glaze thickens and bubbles, stirring occasionally, about 2-3 mins. You can use as much maple syrup or mustard as you like — we suggest making it so it’s 2:1 ratio of syrup to mustard.

3. Brush one side of the chicken with glaze and broil for 5-6 mins. Turn chicken over and cover with glaze. Broil another 5-6 mins until chicken is cooked through. Serve with rice and veggies.

 

While this recipe certainly wouldn’t satisfy chicken parm traditionalists, we can’t help but love how easy it is

Once again the crock pot comes to the rescue for this version of chicken parm. Merely throw all three (yes, it only takes three!) ingredients, cook on low for 6-8 hours and you’ve got a hearty meal. Since this Crock Pot chicken parmesan recipe doesn’t require dredging the chicken in egg and bread crumbs, the cleanup is oh-so-easy as well. Crock Pot Chicken Parmesan Ingredients:

18 oz. boneless, skinless chicken breasts
1 jar spaghetti sauce
1 1/2 cup of shredded mozzarella cheese

Preparation Method:

1.  Place chicken in the crock pot. If you’re using frozen chicken tenders, no need to thaw.

2. Pour the spaghetti sauce over the chicken and cook on low for 6-8 hours.

3. Before serving sprinkle the cheese over the chicken and sauce. Re-cover to let the cheese melt.

4. Serve with pasta, garlic bread and/or salad.

This three-ingredient crock pot sweet pork recipe is so simple you can make it with your eyes closed. At least, that’s what Erin at Table for 7 claims she loves most about this dish. Depending on how much spiciness your tastebuds like (or don’t like), you can switch up your salsa choices to best suit what your picky eaters enjoy most. Serve this pork on top of a bed of rice and dig in.

Ingredients for Crock Pot Sweet Pork: 

2 lbs boneless pork
2 c salsa
1 c brown sugar

Method:

1. Spray crock pot or line with crock pot liners/parchment paper. Add pork into crock pot.

2. In a separate bowl, mix salsa and brown sugar well. Pour over pork.

3. Cook on low for 7-8 hours or high for 4 hours.

4. Shred/cut pork before serving.

The U.S. Department of Agriculture’s Food and Safety Inspection Service recently announced a recall of over 31,700 pounds of ready-to-eat chicken products. The Perdue Foods chicken may contain extraneous bone material. Representatives from Perdue did not immediately return Red Tricycle’s request for comment.

Recalled Product Description: Perdue Ready-to-Eat Chicken

The current recall includes fully cooked Perdue chicken products produced on Mar. 21, 2019. These include PERDUE Simply Smart ORGANICS BREADED CHICKEN BREAST TENDERS – GLUTEN FREE, PERDUE Simply Smart ORGANICS BREADED CHICKEN BREAST NUGGETS – WHOLE GRAIN, PERDUE Simply Smart ORGANICS BREADED CHICKEN BREAST STRIPS – WHOLE GRAIN, Chef Quik Breaded Chicken Tenders Boneless Tender Shaped Chicken Breast Patties with Rib Meat and Chef Quik Chicken Breast Strips Strip Shaped Breaded Chicken Breast Patties with Rib Meat. For a full list of sizes, use by dates and case codes, visit the USDA’s FSIS website here.

Why the Chicken Was Recalled

The affected products may contain extraneous bone material. According to the USDA, the FSIS and Perdue received consumer complaints about the problem. As of now there are no adverse reactions or injuries.

Jeff Shaw, Perdue’s Vice President of Food Safety and Quality, said in a press statement, “We are committed to producing the highest quality products, therefore, out of an abundance of caution, we have decided to recall all affected products that were produced during the same production run.”

How to Tell If Your Chicken Was Recalled

All of the recalled products have a use-by date of May 20, 2019. Even though it’s not likely you have the chicken, which is past it’s use-by date, in the fridge, check your freezer too. The products bear the establishment number “EST. P-369” in the USDA mark of inspection. Visit the USDA’s website here for a complete list of products, sizes, dates and codes.

What Parents Can Do

If you have any of the recalled chicken products don’t eat them. Throw the chicken out and contact Perdue Foods at 866-866-3703 for a full refund.

Chicken salad in the slow cooker? This recipe from The Dinner Mom is so genius we wish we’d thought of it ourselves. It’ll be delicious when freshly made, and works well as a packed lunch, too.

Ingredients
2 pounds boneless, skinless chicken breast
Salt and pepper to taste
8 ounces cream cheese
1 tablespoon tarragon dried
1/4 cup Greek yogurt or low-fat sour cream
1 cup diced celery
1 cup slivered almonds
1 cup cranberries (leave out for very low-carb version)

Method
1. Spray the inside of the slow cooker with cooking spray.

2. Season chicken breast with salt and pepper and place in slow cooker.

3. Sprinkle tarragon over the top of the chicken.

4. Cut cream cheese into cubes and place on top of chicken.

5. Cover slow cooker and cook on high for about 4 hours or on low for 6-8 hours.

6. Open slow cooker and shred chicken with two forks, mixing in melted cream cheese.

7. Remove chicken base to serving dish.

8. Stir in sour cream, celery, almonds and cranberries.

9. We used a 1/4 cup scoop like this to serve. Enjoy!

For a meal that feels fancy without hours of prep work, you’ve got to try this genius recipe from Queen of My Kitchen. Mozzarella, tomato and basil is a winning combination, and with the help of your crock pot, it couldn’t be easier to get this dish on the table.

Ingredients
3 boneless, skinless chicken breasts, 2 lbs. total
1 8.5-ounce jar of olive oil packed sun-dried tomatoes (halves or julienne cut)
4 mozzarella sticks (also known as string cheese)
1 ounce fresh basil
1 14-ounce can of quartered artichoke hearts, drained
1 lemon, cut into wedges
½ cup shaved Parmesan or Asiago cheese

Method
1. Using a fillet knife carefully slice each chicken breast through the middle to make 6 thin cutlets. Place them in a shallow casserole dish and empty the entire jar of sun-dried tomatoes on top. Let the chicken marinate for at least 2-3 hours, preferably overnight.

2. Lay the cutlets flat (reserve the marinade) and place 2-3 basil leaves on top of each. Place a mozzarella stick (trim them to fit) in the middle of each cutlet and, starting at the thicker end, roll it up and secure with a toothpick.

3. Place the cutlets in a slow cooker and pour all of the sun-dried tomatoes, with the olive oil marinade, on top. Follow with the artichoke hearts.

4. Cook on high for 1½ to 2 hours or on low for 3 to 3½ hours.

5. Transfer to a serving dish and remove the toothpicks. Garnish with the remaining basil (chop if desired) and lemon wedges. Serve with Parmesan or Asiago cheese.

For a hearty meal that the whole family will love, you’ve got to try this delish slow cooker meal courtesy of Jessica from Lanc Foodie Girl. It only takes three ingredients, but you can also jazz the tacos up with your favorite toppings. Jessica recommends using chicken thighs since they stay moist, and you don’t even need to defrost them before popping them in the slow cooker.

Ingredients
4 boneless, skinless chicken thighs
2 tbsp. taco seasoning
1 jar salsa
Fire roasted green chiles (optional)
Optional toppings: limes, guacamole, Mexican cheese, chopped red onion, sour cream

Method
1. Dump chicken, taco seasoning and salsa into your slow cooker. Set it to low and cook for 8-10 hours.  

2. Before serving, with 2 forks, shred the chicken right in your slow cooker. If desired, mix in the fire roasted green chiles. Serve immediately.

Serves 4

Ingredients:
2 tablespoons canola oil, divided
2 whole boneless chicken breasts
1 whole red bell pepper, sliced
1 whole green bell pepper, sliced
2 cups sugar snap peas
½ onion, sliced
2 cloves garlic, minced
2 teaspoons fresh ginger, minced
1 teaspoon jalapeño, minced
1 tablespoon hoisin sauce
½ tablespoon soy sauce
1 tablespoon lime juice
2 tablespoons basil, sliced

Method:

1. Add 1 tablespoon of oil to a large skillet. Add in chicken breast and saute until fully cooked, flipping halfway. About 8 minutes.

2. Take chicken out of the pan and set aside. Let the chicken sit for 5 minutes and slice into strips.

3. Meanwhile, add the remaining 1 tablespoon of oil to the same skillet.

4. Add in the bell peppers, snap peas and onions and saute on medium-high heat until they are carmazlied and tender but still have some crunch to them. About 4-5 minutes.

5. Add in the garlic, ginger and jalapeño and cook for an additional minute.

6. Add the sliced chicken back to the pan and stir in the hoisin sauce and soy sauce. Cook for 2-3 minutes.

7. Take off of the heat and add in the lime juice and basil.

8. Serve immediately with a side of rice.

1. Place all ingredients in a heavy pan and bring to a slow simmer. Cover, lower the heat and simmer for 1 1/2 hours or until the beef is very tender. Stir constantly and add more water as needed. If preferred, skim off excess oil before serving.

2. Serve with steamed rice.
