For a meal that feels fancy without hours of prep work, you’ve got to try this genius recipe from Queen of My Kitchen. Mozzarella, tomato and basil is a winning combination, and with the help of your crock pot, it couldn’t be easier to get this dish on the table.

Ingredients
3 boneless, skinless chicken breasts, 2 lbs. total
1 8.5-ounce jar of olive oil packed sun-dried tomatoes (halves or julienne cut)
4 mozzarella sticks (also known as string cheese)
1 ounce fresh basil
1 14-ounce can of quartered artichoke hearts, drained
1 lemon, cut into wedges
½ cup shaved Parmesan or Asiago cheese

Method
1. Using a fillet knife carefully slice each chicken breast through the middle to make 6 thin cutlets. Place them in a shallow casserole dish and empty the entire jar of sun-dried tomatoes on top. Let the chicken marinate for at least 2-3 hours, preferably overnight.

2. Lay the cutlets flat (reserve the marinade) and place 2-3 basil leaves on top of each. Place a mozzarella stick (trim them to fit) in the middle of each cutlet and, starting at the thicker end, roll it up and secure with a toothpick.

3. Place the cutlets in a slow cooker and pour all of the sun-dried tomatoes, with the olive oil marinade, on top. Follow with the artichoke hearts.

4. Cook on high for 1½ to 2 hours or on low for 3 to 3½ hours.

5. Transfer to a serving dish and remove the toothpicks. Garnish with the remaining basil (chop if desired) and lemon wedges. Serve with Parmesan or Asiago cheese.

Pasta can be a real crowd-pleaser. It’s a hit with kiddos, a classic comfort food, and like that LBD in your closet, it can be used on many different occasions. This recipe from On Sugar Mountain for spinach and bacon stuffed shells is perfect for a big family gathering or a simple weeknight meal. Throw the leftover bacon grease into the tomato sauce, and you’ll amp up the bacon-y-ness into phenomenal-flavor territory. If things get a bit messy during assembly, never fear–the end result is so worth it.

Serves 4-6

Ingredients for the Filling:

1 (15oz) container ricotta
1 egg, beaten
3/4 tsp sea salt
1 cup shredded mozzarella cheese
6 slices bacon, cooked and crumbled
1/2 cup frozen spinach, defrosted and drained completely

Ingredients for the Sauce:

leftover bacon grease (from bacon in filling)
a few tbsp olive oil
1/4 tsp sea salt
1 tsp crushed red pepper
2 tsp minced garlic
1 (28oz) can plus 1 (14.5oz) can crushed tomatoes

Bonus: panko breadcrumbs, for topping

Method:

  1. Preheat oven to 350 degrees and spray one 13×9 inch baking dish with cooking spray. Bring a large pot of water to a boil and cook pasta shells until al dente. Drain and toss with a smidge of olive oil. Let cool until you can easily hold one in your hand.
  2. Meanwhile, make the filling: stir ricotta and egg in a medium bowl until well mixed. Stir in sea salt, cheese, bacon and spinach until evenly distributed. Set aside until ready to use.
  3. For the sauce: Pour leftover bacon grease into a glass measuring cup. Add enough olive oil to hit 1/3 cup of oil. Add this, along with sea salt, red pepper, and garlic to a large saucepan. Heat over medium heat until just fragrant, about 1 1/2 minutes. Add both cans of tomatoes and let cook an additional 2-3 minutes or until sauce comes together. Let cool slightly, then pulse in blender until smooth.
  4. Add 1/2 cup sauce to bottom of prepared pan.
  5. Assemble the shells: Hold shell in palm of your hand. Stuff with filling (approx 1 1/2 tbsp per shell) then place, seam side up, in prepared pan. Continue until you finish all the shells/fill up the casserole dish.
  6. Top shells with rest of tomato sauce. Top with breadcrumbs and cover pan with aluminum foil. Bake at 350 for 30 minutes, then remove foil and bake an additional 10 minutes.

Keep the family toasty all winter long with a warm and hearty meal of pork chops, apples, and potatoes with a handful of kale. This recipe, courtesy of Kerry Altiero’s new cookbook, Adventures in Comfort Food combines sweet, salty, and tart flavors and the final dish is exactly what your family needs on a cold winter day.

Serves 2

Ingredients:
2 (8 oz) center-cut boneless pork chops
1½ cups mashed potato
2 apples, halved and cored
More olive oil on hand
6 leaves kale, coated in olive oil
¾ cup cider
Drizzle cider vinegar
Salt
Coarsely ground black pepper

Method:
1. Preheat your oven to 375°F. On the stovetop, heat a 9-inch heavy skillet, preferably cast iron, over medium-high heat. Place the chops fat-side down. We hope you have an exhaust fan. Brown the fat until dark, almost black, about 5 minutes.

2. Turn to the flat side and brown. You do not want to cook it through at this point, so don’t turn to the other side.

3. In a 9 x 12-inch oven-safe casserole dish, place the mashers in a pile. Next to them place the apples, cut side up. Brush both with olive oil. Add the seared chops next to them.

4. Into the oven! Bake for 10 to 20 minutes. The apples will puff up and eventually get to the consistency of applesauce. As you see the apples beginning to puff (it will be at least 10 minutes), top the entire dish with the kale leaves and roast away.

5. When the kale is dark green and beginning to crisp at the edges, pour in the cider. Bubble and boil it will. When everything is hot and the chops are medium or medium-rare (12 minutes or so), remove from the oven and plate. Drizzle some cider vinegar over. Finish the dish with a sprinkle of salt and pepper.

One dish dinner. Music to our ears. Packed with protein, this lasagna doesn’t take long to prepare and is ready in no time. Courtney of NeighborFood says that this recipe is more of a pantry lasagna supplemented with a few fresh ingredients, so it’s a snap to serve during the week. Best of all? It won’t leave you feeling like you’ve overeaten.

Ingredients
9 lasagna noodles
15 oz. can black beans, rinsed and drained
1 1/2 c frozen or fresh corn
4 green onions, chopped
1/2 c chopped cilantro, plus more for topping
1 tsp dried oregano
1/2 tsp cumin
1 tsp garlic powder
1/2 tsp salt
8 oz. shredded Mexican blend cheese
28 oz. can diced tomatoes, drained
Smoked Chipotle tabasco sauce (or regular hot sauce if you can’t find Chipotle)
Sour Cream (optional)

Method
1. Preheat the oven to 400 degrees.

2. You’ll need a casserole dish that’s somewhere between 9 x 9 and 9 x 13. You can use whatever size dish, just cut your noodles to fit.

3. Cook noodles according to package directions. Drain and rinse with cold water to stop cooking.

4. Meanwhile, in a medium bowl, combine black beans, frozen corn, green onions, cilantro, oregano, cumin, garlic powder, and salt.

5. Layer a small amount of tomatoes on the bottom of your baking dish (about a 1/4 of the can). Top with noodles. Layer 1/3 of the bean mixture on top of that. Spread another 1/4 of the tomatoes on top, sprinkle with hot cheese, then spread with 1/3 of the cheese. Repeat 2 more times following the same pattern (noodles, bean mixture, tomatoes, hot sauce, cheese).

6. Cover with foil. Bake in the preheated oven for 20 minutes, then uncover and bake for 5 minutes more or until cheese is nice and melty. Allow to set up for 10 minutes before serving.

7. To serve, sprinkle with cilantro and a dollop of sour cream, if desired.
