Part sweet and part savory, this stir-fry dish is a cinch to make and will please any kid’s picky palate

Inspired by her husband’s love of chicken wings, Kari of GI 365 created this Honey Garlic Chicken stir-fry recipe that features the same sweet and savory flavors of her hubby’s favorite dish. Your kids will love the flavor combination, and you’ll love that making this healthy meal only takes 30 minutes. It’s a win-win.

Serves 4

Ingredients for Honey Garlic Chicken:

Sauce:
⅓ cup soy sauce (or coconut aminos)
1 Tablespoon organic cornstarch
⅓ cup honey

Stir-Fry:
1 medium onion, diced ½”
1½ pounds broccoli, stems peeled
1 pound chicken thighs, cut into 1″ cubes
2 Tablespoons avocado oil, (or olive oil)
¼ cup water
3 cloves garlic, minced

Method:
1. Start by mixing the soy sauce and cornstarch together until the cornstarch dissolves. Add the honey to the soy sauce mixture, but you don’t need to combine them (this happens in the pan).

2. Thinly slice the peeled broccoli stems, cut the florets into 1″ pieces, and set the broccoli aside with the onion.

3. Preheat a large skillet over high heat.

4. When the pan is almost smoking, add 1 Tablespoon of avocado oil and the chicken cubes. Sauté for about 2 minutes to brown before turning the chicken cubes, and cooking until golden brown and done in the center. Remove the chicken from the pan and set aside.

5. Reduce the heat to medium-high and add the remaining 1 Tablespoon of avocado oil to the pan. Add the onion and broccoli, and cook stirring every 30 seconds for 3-5 minutes or until the onions begin to soften and the broccoli turns bright green but is still crisp.

6. Add the ¼ cup of water to the pan, cover with a lid, and simmer for 3 minutes until the water has mostly evaporated and the broccoli is just tender.

7. Add the sautéed chicken, minced garlic, and the sauce into the skillet.

8. Stir to incorporate the honey, and simmer for 1-2 minutes to thicken the sauce. Serve immediately.

Returning from last year is the Pumpkin Spice Signature Latte, pumpkin flavored coffees, apple cider donut, pumpkin donut, Munchkins Donut Hole Treats and pumpkin muffin. To up the ante, Dunkin’ is giving pumpkin lovers medium Pumpkin Cream Cold Brews or medium Pumpkin Spice Signature Lattes for just $3 now through Sept. 14!

To round up the menu offerings, the coffee and donut purveyor is introducing a new option in the Limited Batch Series, 100% Guatemalan Coffee. For every cup sold of the brew, 10 cents will benefit One Tree Planted, to support reforestation efforts in Guatemala from Sept. 12 through Oct. 12.

The fall Dunkin’ menu will be available for a limited time at participating restaurants nationwide staring Aug. 18.

The Mama Cozzi’s Pizza line earned its own category this year, after being the overall fan favorite in 2020. And it’s still a winner: The brand’s Kitchen Take and Bake Deli Pizza was a top vote-getter this year, with more than 45,000 votes.

Among kid favorites, three-time champion Happy Farms String Cheese earned more than 50% of the votes in its category this year, winning by a landslide.

The lunch buffet at the Hyatt in New Delhi is a grandiose feast of sauces, chutneys, chapati, proteins, and more. In the center of it all is a beckoning treat stand displaying delicate chocolates and perfectly swirled gelato. No doubt my daughters, Priya and Ari, had never seen this much food in their lives. At the orphanage the girls were fed rice and occasionally a hard-boiled egg. Ari, my youngest child, weighed a mere 20 pounds at 3.5 years old having been malnourished most of her childhood.

Placing a variety of food on her plate, I curiously watched to see what she’d entertain. I gave her a glass of milk alongside a hard-boiled egg, scrambled eggs, lentils, rice, fruit, noodles, vegetable curry and carrots on her plate.She immediately downed the milk wanting more. I suspected the children only received water in the orphanage. The hard boiled egg was obviously familiar and the scrambled eggs she avoided. Fruit was well received and vegetables were naturally pushed around the plate, although Ari loved raw carrot sticks. Perhaps she liked the crunch or could sense that her body was desperately craving those nutrients? Pasta and lentils were handed over to big sister Priya who wanted all the spicy Indian cooking she could get her hands into!

After an adventurous lunch, we strolled by the treat stand. “Would you like to try some gelato, Ari?” I asked. Scared of what her taste buds may encounter she said a firm “Nah.” A friendly woman behind the gelato stand quickly recommended the coconut gelato. Maybe she could sense my girls were eager to run around the open lobby or it was her personal favorite? We thought the suggestion was a wise choice because coconut milk is a common ingredient used in Indian cooking. Familiarity is a friend during the adoption process. I ordered a coconut ice-cream cone for myself and placed a dab of that sweet goodness onto my daughter’s lips. Her eyes glowed as I handed over the dripping treat. Watching her tiny stomach grow into the shape of a basketball, I knew we both felt content.

Excitement and anxiety are at the root of many discoveries for an adopted child. I recall experiencing the world through my biological children’s infant eyes and those were monumental indeed, but the firsts experienced by my adopted daughters felt extraordinary compounded by their unfortunate beginnings. Our entire family began relishing in seeing the world from their perspective.

Our daughters, Priya and Ari, were brought home from India under the age of 5. Understandably, their environments were flipped figuratively and geographically. Most changes were embraced but some cultural differences were met with obstinance. Even then, I gained empathy for their experience and praised their willingness to explore their unpredictable new surroundings.

While visiting India we spent a great deal of time in the car but there are no laws requiring safety seats and often you see children riding on the front of motor bikes racing down a freeway. This made car rides stressful since our daughters were constantly moving around the backseat trying to get a better view of the outside world. Once we returned home, we enthusiastically introduced Priya and Ari to the high back, harnessed car seat. That didn’t go over very well! We coaxed them into the seat and fastened it securely but then they realized there was no going back. My errands were met with a chorus of wailing and screaming for a week that no lollipop could cure.

The simple pleasure of a warm bath in a bathtub was heaven for Priya and Ari. They’d spend 45 minutes scrubbing their bodies feverishly and giggling through the bubbles. Seeing the sky so blue was something Priya never thought possible due to the air pollution in her village. My daughters had a way of acknowledging each day in quiet appreciation, something I’d seldom observed in a child. At dinner, they fed each other morsels from their respective plates, reminding one another that they would continue to take care of each other. These moments caused me to pause and ponder the unspoken emotion in the room.

I wrote “Finding Family in a Far-Away Land” to capture my daughter’s memories but also to help them remember. Mental memories are important, but their beginnings are engrained in their souls and reflected in their behavior, something that reminds me to see each day with an increased awareness. There is beauty in new beginnings and the joy of overcoming adversity. I hope through reading our family’s story your child enjoys exploring the world through Priya and Ari’s eyes too.

Florida has thrilling theme parks, beautiful beaches, amazing art museums and an abundance of other adventures. But do you know it also has the best places for spotting shells or the local restaurants that kids will love?

Champagne Supernova

Tampa-based mom Jennifer likes to head the family to Boca Grande or Islamorada when they’re looking for an in-state adventure. Boca Grande is their go-to place for relaxing and searching for sand dollars, followed by a cone at Dolphin Cove. For brunch, she suggests a stop at the beachy-themed Gasparilla Inn. Jennifer also suggests Islamorada for an action-packed trip, including diving for spiny lobster (with Morado Bay as a backup in case your catch doesn’t go as planned) and heading to the coral reef near Alligator Point to snorkel with the tropical fish in their natural habitat.

 

Everyday with Ember

Sherri and her two kids love the beaches near their South Florida home, but when they’re looking for another place to cool off, they head to Coconut Cove Waterpark in Boca Raton, which has two four-story waterslides. An afternoon in nearby Downtown Delray is also a day well spent, thanks to more than 100 local boutiques and galleries. When your family can’t decide where to eat, the new Delray Beach Market is a lifesaver, with tons of dining options under one roof. Sherri also suggests wandering around Mizner Park in East Boca and a stop at Rex Baron for dinner. It’s an AR experience and restaurant, so you can check multiple vacation boxes at one stop.

 

Mommyhood Joy

Kimberly’s two little ones love animals, which is why she suggests a trip to Butterfly World (home to over 20,000 butterflies!) in Coconut Creek or Lion Country Safari (with a drive-thru safari and animal feeding!) in Loxahatchee. When it’s time to cool off, Kimberly suggests Haulover Park in Miami for a dip in the ocean. If oceanside is more your style, 50ocean and Latitudes are both beachfront restaurants with stunning views.

It’s easier than ever to support Asian-owned businesses online, thanks to a new initiative from Target. The retailer just announced a badge that identifies Asian-owned brands and they’re spotlighting these products online as Asian/Pacific American Heritage Month continues.

Whether you’re looking for coconut chips or a new children’s book, you can find the badge in the “At A Glance” section of the product description. It accompanies two other badges that Target has released in the past year: a Black-owned business badge and a women-owned business badge. And it’s in line with the company’s mission to leverage change and shift power to communities, as noted in March on the Target Foundation page.

Through our existing approach in driving systems-level change, we are committed to centering equity and investing in Black, Indigenous, and Person of Color-led (BIPOC) organizations.
