So, the game day party was a hit. The decorations were on point, you cheered your heart out, kids played, your team won (we hope), and now you’re left with the biggest party favor of all…leftovers!

What some see as a mountain of mess, we see as an opportunity to minimize food waste and stretch the dollars you’ve already spent on quality food.

Plus, with some-pre planning and encouraged creativity, you can share take-away boxes with your guests so everyone can enjoy your Smithfield game day recipes all week long, in all new ways.

Here are 5 ways to transform your Game Day leftovers.

1. Say Yes to Quesadillas

We love how quick and easy quesadillas are, whether it’s a savory snack for a house full of kids or part of a family dinner, they’re customizable and easy to share.

Two game day recipes we’re eyeing that are sure to provide supreme ingredients for quesadilla leftovers are the bacon and cheese dip and Italian sausage nachos. Set aside some of your delicious cheesy dip for the base, and top with any remaining Italian sausage from your nachos.

2. Breakfast, Anyone?

A hearty breakfast is the perfect pick-me-up after a long night of celebrating with the family. Use any leftover meats to create a bacon & cheese omelet, eggs’ benedict or savory breakfast casserole.

3. Don’t Forget About the Pasta-bilities

No matter the spread from your party, you can soak up the flavors from your deliciously seasoned dishes like leftover Italian sausage sliders or the cowboy chili hot dog fixings to create a brand new pasta dish for dinner the following night. Some ideas for “next-night” pasta transformations include baked ziti with smoked sausage, a chili pasta bake, or even a creamy spinach and sausage pasta. Bon appetit!

4. Your Freezer is Your Friend

This is a mantra to remember. Fruit salads and crudite platters are often present at game day events and one of the easiest areas to repurpose into leftover use. To start, turn fruit salad leftovers into individually packaged, pre-proportioned smoothie packs. Keep these easily accessible in your freezer and ready to toss into your blender. Next, compile remaining veggies from your crudite plates, charcuterie boards or dip platters into a freezer-safe container to be used in soups and sautees.

Freezer Tip: If you’re a fan of acidity and brine-y flavors, skip the freezer and try quick pickling leftover veggies. Carrots, cauliflower, peppers, and snap peas are all perfectly “pickle-able”. Simply submerge your vegetables of choice into an existing empty pickle jar full of the leftover brine, or make your own brine with vinegar (distilled white vinegar or apple cider vinegar), water, and salt. Let this mix marinate for up to 48 hours, then enjoy as a delicious side or addition to salads, sandwiches, pizzas, and more.

5. Bun(s) in the Oven

Maybe your Game Day included the ultimate DIY hot dog bar and you’ve got buns to spare, we got you. Whether it’s hot dog or burger buns there are many ways to repurpose these breads into homemade croutons, breadcrumbs, casseroles, or even bread pudding.

Storage tip: wrap your leftover buns tightly in plastic and keep them at room temperature for up to one week. You’re looking for them to get just a little dry and crunchy to become the perfect temperament for their second use in any form mentioned above. Of course, you never know if any will make it to the one-week mark uneaten!

There’s no denying that Oregon is filled with the most awe-inspiring sights. From lush forests to scenic rivers and waterfalls, majestic mountains and miles’ worth of glistening coastline, the Beaver state is a postcard come to life.

During the holidays, the Beaver State’s beauty is amplified thanks to festive light displays and decor and seasonal community outings. Add in an exciting itinerary for exploring and a lengthy bucket list of activities, and you’ll find your family creating new holiday traditions.

If you plan to do a road trip this winter to switch up your usual plans, we recommend making stops by the coast and high desert regions for exciting festivities—and, of course, a little bit of R&R for moms and dads. Fortunately for parents, Salishan Coastal Lodge by SCP Hotels and Soul Community Planet (SCP) Redmond Hotel offer exactly that.

Read on to discover how these two hotels make for an easy-to-plan itinerary during your holiday road trip through Pacific Northwest.

Salishan Coastal Lodge

Salishan Coastal Lodge

A road trip through Oregon isn't complete without a stop at the coast, which boasts 363 miles of shoreline. The stunning area is filled with many natural wonders that make it hard to pack up your bags when your getaway is over. Picture soaring sand dunes, a tranquil rainforest escape, jagged ocean cliffs and glistening waterfalls even the highest-quality photos can't do its beauty justice.

Now that you're wrapped up in the coast's undeniable charm, it's time to find a perfect lodge that mirrors nature's essence. Nestled in the heart of the Oregon Coastal Region, Salishan Coastal Lodge provides a well-balanced retreat for parents and kids alike. With its focus on both holistic wellness and eco-friendly experiences, families can enjoy a private hatha yoga session at The Spa at Salishan. Not only will moms and dads get a little bit of peace and quiet, but kiddos can learn soothing mindfulness tactics that they can bring back to school with them after the holiday break.

With Siletz Bay just a few miles out, parents and kiddos can also try their hand at clam digging—yes, we said it! If rustling around the sand isn’t your thing (we totally get it), spend the day paddleboarding as a group, especially once after feeling limber from yoga. Then top it off with a night at the Siletz Bay pier.

Salishan’s 200-plus acres, which neighbors evergreen forests, also provide an opportunity for year-round, outdoor activities that’ll keep the whole family entertained. If biking and hiking are more your family's speed, head to the local trails in the early hours then take an afternoon stroll on the shoreline of Gleneden Beach. Evenings by the waves call for a picnic and bonfire duo that offers not only beautiful views but lasting memories.

Let’s not forget about our golfing parents either. Salishan Golf Links touts an 18-link course whose restoration design was overseen by Oregon golf legend and PGA Tour Pro Peter Jacobsen. While Dad hits the links, youngsters can soar high up in the trees at Salishan’s on-site Aerial Park–the only of its kind on the Oregon coast. With trained aerial guides by their side, they can climb and maneuver their way through the park's 15 obstacle platforms.

To end a jam-packed day, set your sights on sunset views, with a micro-brew or handcrafted cocktail in hand, at Salishan’s The Attic. You'll actually leave feeling rejuvenated post-vacation.

Let’s get you booked today with Salishan Coastal Lodge!

Soul Community Planet (SCP) Redmond Hotel

SCP Redmond Hotel

The next stop to perfect your Oregon road trip is a stay in the state's High Deserta nickname given to the region since it sits at 4,000 feet above sea level. The area is bounded by the Blue Mountains and the Cascade Mountains, offering a sweeping landscape of towering rock pillars, rugged terrain and incredible wildlife. Fun fact: most of the High Desert was formed about 10 to 30 million years ago from a series of lava flows.

To revel in these sights, head to SCP Redmond Hotel in Central Oregon, which takes the concept of a hotel to the next level. It blends modern touches with mindfulness by offering rejuvenating wellness amenities, locally grown and sustainably-sourced goods, and minimalist suites that bring the beauty of the outdoors inside. Plus: moms and dads are greeted with a welcome glass of craft beer or kombucha upon arrival!

With easy access to Mount Baker, a popular local ski destination, parents don’t have to plan a single thing. Just be sure to wake up early each morning to enjoy a day of snow play and hitting the slopes. You can also catch sweeping views of the mountains that the family will never forget, which is the perfect photo op for next year's holiday card.

For days when parents want to slow down from the usual hustle and bustle, turn to SCP's dedicated meditation room and amenities. You'll not only get a well-deserved break but you can also carve out time for mindfulness. To take your wellness practice a step further, though, book a Peaceful Room for your stay. These rooms have everything you need to wind down while your little one naps, from essential oil diffusers to meditation pillows, sound machines and Himalayan pink salt lamps. They also provide a refreshing break from technological distraction, with no television screens or alarm clocks to disturb you while you relax and recharge during a deep night’s sleep.

A vacation isn't complete without tasting the local food. The SCP Redmond Hotel brings local flavors right to you and your family, offering four food and beverage options right inside the hotel that make planning meals a breeze. With farm-to-fork menus, creative and nutritious dishes and seasonal, organic ingredients, parents can guarantee each meal time is providing the right amount of fuel to get through the day's activities.

In the mornings, grab a fresh coffee from local roaster, Backporch Coffee to start the day off right. When the kiddos are in need of a midday pick-me-up, Provisions Market is just what they'll need. With a focus on plant-forward breakfast and lunch plates, this casual dining option is both healthy and delicious for parents and kids alike. We recommend the Heirloom Tomato Grilled Cheese or Crunchy Cashew Quinoa Salad.

Looking for dinner that’s good for you, good for the planet, (and just really, really good)? Head to Terra Kitchen, a farm-to-fork restaurant next door to the hotel lobby that provides locally grown and sustainably sourced menus highlighting Central Oregon's flavors in colorful and crave-able dishes you won’t find anywhere else. Or head to The Rooftop for stunning panoramic views of the Cascade Range (this includes the Three Sisters volcanic peaks, Mount Bachelor and Black Butte) while enjoying their locally-inspired small plate menu.

Family and community are also key to the hotel’s mission. Through SCP Redmond Hotel's Every Stay Does Good program, every guest who books a stay at the hotel plants one tree in an unnaturally deforested area, provides one adolescent with well-being tools and resources and lights the home of a family caring for a critically ill child for 24 hours. Every visit to the hotel helps create positive and meaningful change.

If children could eat one food for the rest of their lives, most parents would agree it’s cheese. From cheddar to American and mozzarella, the mouth-watering ingredient is a must-have ingredient for little ones’ favorite dishes.

Tiny turophiles don’t just stop there, though. For moms and dads who’ve witnessed the joy on their child’s face as they dunk nachos into a creamy bowl of queso blanco, know that this special treat also tops the list.

The white cheese dip packs in impressive flavors that even the pickiest of eaters can’t get enough of. Fortunately, with Queso Mama® queso you can bring home a variety of premium, ready-to-eat quesos that your little foodies can put on anything and everything. Whether it’s breakfast, lunch or dinner, Queso Mama makes for a nutritious meal that’s more than just a dip.

Be sure to check out Queso Mama’s Facebook and Instagram for more!

We spoke with Queso Mama’s founder and CEO Leigh Vickery for three simple recipes your queso connoisseur will love along with pro tips for preparation, storing and repurposing your meals. An added bonus – these recipes are great for the holiday season as they’re easily tailored to serve large parties, and they’re safe for those with food sensitivities and dietary restrictions.

What is Queso Mama?

Founded in 2009 by Leigh Vickery, Queso Mama is a refrigerated, ready-to-eat white queso made with high-quality ingredients, such as white cheese, green chiles and spices. The mother of two introduced her unique, clean-label queso as an alternative to highly-processed products that already existed on the market.

For Leigh, creating a recipe that families with food sensitivities and dietary restrictions could enjoy was key, having experienced these challenges first-hand with her oldest son. She worked diligently to create her premium queso that’s not only free of gluten, artificial additives, added sugars and preservatives, but also keto-approved, vegetarian-friendly and safe for those with tree nut or peanut allergies.

“My firstborn son was born with terrible food allergies and…at the time, the allergen laws weren’t around, so you couldn’t go to the grocery store and buy anything,” says Leigh, who is also referred to as Queso Mama by devoted customers. “I started creating all-natural, fun foods for him and, not realizing, I was truly starting a business that became what it is today.”

The rich, velvety cheese is available in two unique flavors that range from mild to spicy—like White Queso with Diced Green Chiles, and White Hot Queso with Roasted Jalapenos —to satisfy your entire family’s tastebuds.

The full-time entrepreneur and mom also kept parents and busy weekday schedules in mind when developing Queso Mama. Leigh, who grew up in a household of six, wanted families to be able to spend more time together around the dinner table and in the kitchen by creating fun, simple recipes—just as she had experienced growing up.

“A lot of times, food lets you talk around the table and help you find common ground with one another,” says Leigh. “[Growing up], we had lively discussions and great food. You just have to carve out that time as hard it as is, but it becomes sacred.”

As a result, Queso Mama can be made within minutes, helping families prepare simple and fast dishes that still pack in nutrients. Thanks to the simplicity, your kiddos can now play a part in the holiday meal-prep experience, whether you’re hosting a festive meal at home, or plan to bring a flavorful dish to a group potluck. Simply scoop the thick, creamy mixture from the tub, heat it in the microwave in a microwave-safe bowl and add to your preferred meal.

Convenient Recipes For Each Meal of the Day

Queso Mama is the perfect addition to any dish. From soups and pasta to dips and casseroles, these “magically cheesy bowls of love” will bring your recipes to a new level.

Looking for something extra delicious to do with your queso? We’ve compiled three of Leigh’s exciting recipes to make with your little ones this holiday season.

It’s time to head South for some quality family time in Alabama. Whether you’re looking to get lost in history, enjoy time connecting in nature or explore local family-friendly attractions, Sweet Home Alabama has something for everyone.

From space exploration to a foodie family’s dream spot, you and your crew will love what you’ll find along the scenic roads of Alabama. We rounded up our favorite family road trip finds for your next three-day getaway.

Day 1

Start your epic road trip in Huntsville, nicknamed Rocket City. With the perfect balance of history, art, culture, nature and science featured in their family-friendly attractions, we picked our top places to stop in 24 hours.

Grab freshly-made pastries from Peggy Ann Bakery, one of the oldest and most revered bakeries in town. It’s perfect for any sweet tooth in your family, providing endless options of cookies, brownies, cupcakes and muffins. Then, head ten minutes up the road to the U.S. Space and Rocket Center. Get ready to check out one of the biggest collections of spacecraft, rockets and tons of incredible space artifacts. Anyone over the age of seven can participate in the Family Aviation Training and the Family Astronaut Training as long as they bring an adult.

When you’re ready for lunch, head to Tenders!  in the Five Points Historic District for the best platter of nuggies—a.k.a. the “Big Daddy” that comes fully loaded with tenders, fries, Texas toast, slaw and a side of two sauces.

Then, drive eight minutes southwest to the Hunstville Botanical Garden for 118 acres of fun, exploration and beauty. From aquatic habitats and stunning woodland paths to beautiful collections of Alabama’s native plants, the Garden invites guests of all ages. We recommend scoping out the open-air butterfly house, the largest in the nation, so your youngsters can encounter breathtaking butterflies.

Once everyone dries off, drive seven minutes to the Earlyworks Children’s Museum, an interactive museum built for children. Inside you’ll find hands-on exhibits such as their kid-struction zone, federal house, general store, and more. Don’t forget to stop by the Talking Tree for a magical storytime.

Finish your first day with award-winning, Alabama-style eats at Moe’s Original Bar B Que, from delicious wings and pulled pork to Shrimp Moe-Boy sandwiches. Bonus: the Mississippi mud pie will be the sweetest ending to your first day.

Day 2

Drive just 90 minutes south, and you’ll be in beautiful Birmingham where sports, history and animal fun abound. If you’re going to explore all this town has to offer, you’ll need to start with a hearty breakfast. Filter-Coffee Parlor makes all-day frittatas and hefty bagel sandwiches. After breakfast, head five minutes away toward the 56-foot-tall cast iron statue (the largest on earth) in the four-acre Vulcan Park

After you take in some of the best city views in town, stop by the Vulcan Park & Museum for a kid-friendly scavenger hunt. First, grab a worksheet; you’ll love how it captures your kids’ attention and keeps them interested in what the museum offers. Then, walk up the stairs or hop on the elevator to see the city from a phenomenal perspective.

Pro tip: Your tickets are good all day, so you can come back to see the sunset after you finish your Day 2 adventures. It’s open until 10 p.m.

After you’ve worked up an appetite, head downtown to Railroad Park. The 19-acre green space, known as “Birmingham’s Living Room,” hosts family activities, concerts and cultural events.

It’s hard to believe, but 15 minutes away, you’ll find what feels like a world away at Ruffner Mountain Nature Preserve. With over 1,000 acres to explore, an afternoon won’t feel like enough time, but you can still do and see plenty. Start at the Nature Center, where you can see native species, including snakes. Then, hit the Quarry Trail. It’s very clearly marked and easy to follow. About halfway through the hike, you’ll get a great view of all the planes coming and going from the airport. Fur babies are welcome at the preserve, too.

For dinner, head 16 minutes south of Ruffner Mountain Nature Preserve to check out the Homewood location of Ashley Mac’s. The mom-owned and mom-run restaurant not only boasts an epic kids’ menu but they’ll also help keep your little ones’ hands busy with Wiki Stix. If you’d rather grab takeout, the restaurant offers weeknight meals for around $35 to feed a family of four.

Day 3

We found two great itinerary options for the last day of your adventure.

Option 1

Head a half hour south and get ready to spend the perfect family day at Oak Mountain State Park. With over 50 miles of hiking, biking, fishing, swimming and equestrian trails, your tiny outdoor enthusiasts will love all that there is to do. Pack your food because the state park is in a remote location and be sure to take advantage of the day-use picnic facilities where tables and grills make for an enjoyable lunch.

For fun, rent a boat or pack a paddleboard to get out on the water. The lake is also known for its good trout fishing, so don’t forget your tackle box. Or, spend the day soaking in the sun and splashing in the clear water.

Option 2

Drive about an hour and a half to Montgomery, the capital city and one of the most important sites of the Civil Rights Movement. This thriving city was home to the Montgomery Bus Boycotts, where Dr. Martin Luther King Jr. once preached and where the Selma to Montgomery Marches ended.

Start your day at the National Memorial for Peace and Justice, America’s first national memorial to remember the victims of lynching. Each steel monument hanging from the ceiling represents the U.S. counties where lynchings tragically occurred. In addition, the museum provides an impactful opportunity to teach kids about slavery and discrimination.

Finish your last day burning off some energy at the Montgomery Riverfront Park that sits along the banks of the Alabama River. It features areas for little and big kids to enjoy, including riverboat rides, an amphitheater for concerts and productions and the historic Union Station Train Shed that serves as a venue space for family-friendly events. Your kiddos will love the sprawling space and nonstop entertainment.

While other more popular cities might first come to mind, these underrated travel destinations are top-notch and have as much (or more!) to offer families than their well-known counterparts. Continue up the trail and follow signs for the waterfall for another mile where a bridge will cross over the waterfall.

Good to know: Coming from the pancake-flat Bay Area to about 5600 feet in elevation means it's important for families to hydrate frequently and slow down with strenuous activity. Please use wise judgment and bring hats, sunglasses and plenty of water for the littles.

Strap on those ice skates and enjoy South Lake Tahoe’s only outdoor ice skating rink, opening November 1.

It’s happening! With optimism in our hearts and travel plans on our minds, many Seattle families are first and foremost thinking of a family reunion with loved ones we haven’t been able to see. These fabulous travel destinations will welcome your extended family with open arms—as you’ve been wanting to do for months. Here’s where to get the band back together!

Western-Style Outdoor Adventures: Brasada Ranch, OR

Brasada Ranch

The stunning drive that leads to Brasada Ranch is just a prelude to the gorgeous scenery surrounding the property at every angle, with the Three Sisters watching over the ranch from afar. For families who want to grab the bull by the horns, this is your place. Boasting more activities than a cruise ship, Brasada Ranch has brilliantly transformed its event space into family fun space. The aptly named The Barn event center can be transformed into a Family Movie Night hangout space. The Range, Brasada’s farm-to-table restaurant and sunset cocktail-sipping hot spot, is also home to group star gazing nights with an astronomer on hand to guide Littles through the galaxy. Brasada Afterschool program includes science classes, hikes, crafts, archery and more.

This summer Cowboy Cookouts arrive so get your tiny dogies ready! They get to dress, walk and talk like a real western wrangler. Lassos, pony rides and of course s’mores fill out the program. The resort has something to fill up every minute of the day. Jump in the pool with the kiddos, slide down the slides and soak in the hot tub while taking in the view of the Cascades. Or hop over to the adult pool for some chill time. Expert trail hands lead the group horseback rides–we highly recommend the s’mores and hot chocolate ride. Enjoy tennis, pickle ball, golf, hiking, a full fitness club and spa and an outdoor Peloton Studio with mountain views. Sometimes the best times are to be had back at your cabin. These three- and four-bedroom abodes are fantastic for groups since the main room can be sectioned off. Reserve the cabins with jacuzzis and order customized ranch platters to barbecue dinner on your deck.

Gather the Gang: Ask for Brasada Ranch’s signature scavenger hunts to navigate the property for a prize. Your group can also enjoy customized experiences such as Family Olympics on the lawn, or an organized river rafting excursion.

Your Home Away From Home: Iron Springs Resort

Iron Springs Resort

Iron Springs Resort in Copalis Beach is the type of place where families return year after year, with the sandy shore as their playground and sunsets on the Pacific as evening entertainment. Owned by a family who used to be annual guests, they have lovingly restored the cabins and stocked them to the gills with local and found art, and one-of-a-kind, colorful recliners for reading and gazing at the sea. The kitchens also come loaded with all the accoutrements you need to make vacay snacks a snap. Iron Springs cabins are like a second home your family shares, time-tested and comforting, a place you don’t want to leave. All the cabins have sweeping views, large, stone fireplaces and endless supplies of wood. Peek in the freezer for a fun surprise—each guest receives cinnamon rolls to pop in the oven. It’s a resort tradition. Larger groups should book adjoining cabins; this allows the kids a place to sleep or play, doors shut, while the adults gather to reminisce and toast.

Copalis Beach is all the fun your family will need—razor clams, tide pools, tag games and long strolls. Iron Springs Resort welcomes dogs, as does the beach--so bring your four-legged friends. There are hiking trails nearby and puzzles, books and games for rainy days. For some fine dining, reserve a table at Ocean Crest, just ten minutes away, for exquisite cuisine that matches the view.

Gather the Gang: Go fly a kite! Plan your Iron Springs Resort trip around the Grays Harbor Festival of Colors June 4–6, 2021. Don’t worry if you miss it—the kids can fly a kite in Ocean Shores 365 days a year due to ideal wind conditions.

Water & Whimsy: Heathman Hotel

Natalie Compagno

Kirkland is a walkable town nestled on the shores of Lake Washington. This waterfront community impresses visitors with the number of boutiques, cafes and parks packed into its quaint streets. The Heathman Hotel Kirkland is the place to post up with your entourage. Check into a Prelude King or a suite so your kiddos can sleep on a pull out by the fireplace. The suites resemble city penthouse apartments—your group will feel like rock stars. Sit outside on the patio and enjoy dinner at Hearth and savor stone fired pizzas and classic Northwest comfort food. Every entrée is delicious, but we recommend the Miso Roasted Pacific Cod with a Smoldering Rye Manhattan. Littles will fight over who gets to break the bubble and release the smoke on this dramatic craft cocktail. The kids’ menu is excellent, with great portions and a cute coloring page for entertainment.

Treat yourself to a hearty breakfast at nearby George’s. Established in 1976, it is the longest family owned and operated restaurant in the heart of Kirkland. Ice cream sundae for breakfast anyone? Don’t forget to book your tee time! Family-friendly Flatstick Pub has a challenging but fun 9-hole mini golf course. Multiple ways to attempt that hole-in-one make it fun for all ages. The beer is pretty tasty too.

Sleep in the Trees: Skamania Lodge

Skamania Lodge

What would it be like to sleep among the branches and wake up with the birds? The six treehouses at Skamania Lodge in Stevenson offer families a group slumber party up in the air. These high-in-the-sky rooms come with s’mores kits for the fire pits below, decks for star gazing and an indoor/outdoor fireplace. Some even have guitars for campfire ballads. Littles will love the queen beds nestled into the window nook, with curtains that can close to create their own fort. These aerial abodes are grouped together away from the lodge, so you can enjoy your time together in peace.

This wow factor is hard to beat, but the treehouses are not the only reason to check into Skamania. Inspired by historic national lodges, the resort has a welcoming great room with a crackling fire, and a rolling lawn as a backdrop that seems to plunge directly into the Columbia River. After playing tag or sipping wine in the Adirondack chairs, go zip lining, try axe throwing or take on the aerial course—all available for booking at the front desk. The indoor pool will make a splash with the kids, and parents will love the outdoor hot tub with its soothing waterfall. The on-site restaurant features local faves like steelhead trout and offers to-go for picnic pleasure. Kids will love the brick oven pizza. Save room for dessert or have a Sasquatch nightcap. Your bed is only steps away. It will be hard to say good-bye to the friendly and welcoming staff at the end of your trip.

Gather the Gang: The treehouses are wildly popular. Book well in advance to make sure the whole family gets to enjoy.
