If your’e a fan of lemon poppy seed muffins, this recipe is sure to please. Courtesy Lisa Viger, author of Easy, Affordable, Raw: How to Go Raw on $10 a Day, and raw food expert, these buckwheat pancakes make for the perfect weekend breakfast or brunch dish. Serve with agave or date syrup.

Makes 4-6 pancakes

Ingredients:
1 cup (100 g) ground buckwheat groats, soaked and dried
½ cup (50 g) ground flaxseeds
Pinch salt
½ cup (115 g) apple puree
3 tablespoons (45 ml) lemon juice
1 teaspoon lemon zest
¼ cup (60 ml) agave
3 tablespoons (30 g) date paste
¼ cup (60 ml) water
2 tablespoons (15 g) poppy seeds

Method:
1. In a medium bowl, mix together the buckwheat, flaxseeds, and salt. Add the apple puree and then the lemon juice, lemon zest, agave, date paste, and water. Stir until well combined. Fold in the poppy seeds.

2. Using about 3 tablespoons (45 ml) of batter for each pancake, scoop out pancakes onto a lined dehydrator tray, making 2- to 3-inch (5- to-7.5 cm) rounds that are about ½-inch (1-cm) thick. Dehydrate at 118°F (48°C) for 6 hours. Peel from the tray liner and flip over onto an unlined dehydrator tray. Continue drying until the outside is beginning to get a little crisp and the inside is still a bit mushy.

3. Pancakes are best straight out of the dehydrator, but they can be kept in a lidded container in the refrigerator for up to a few days.

Nutrition FYI: Buckwheat
Buckwheat isn’t a grain. It’s a fruit seed related to rhubarb and sorrel. It’s high in manganese, tryptophan, magnesium, copper, and fiber, and it has been linked to a lower total serum cholesterol, lower LDL cholesterol, and lower blood pressure. Buckwheat works in synergy with vitamin C and contains flavonoids and antioxidants.

Get ready for a new twist on an old classic: the Starbucks Cloud Macchiato recently hit store menus, making it a welcome addition to the coffee retailer’s bounty of caffeinated goodness. Read on to learn more about the luxe layers of this new must-have pick.

Starbucks first introduced the macchiato on their first menu in the ’80s, with a caramel version following a decade later. Throughout the years, the traditional Italian espresso drink morphed into more flavorful versions, with coconut milk and cinnamon almond milk flavors. The newest macchiato to hit Starbucks stores features two flavors, Caramel and Cinnamon, along with a fluffy layer of Cloud foam—made with eggs whites!

If you’re wondering what eggs have to do with your coffee drink, think meringue. The drink draws inspiration from the popular Spanish “leche merengada” or “meringue milk” summer beverage. Starbucks research team member Erin Marinan said in a statement, “The original Spanish beverage combines cinnamon and lemon zest, with a frothy texture which inspired us to reinvent the beverage as a macchiato.”

Marinan added, “The texture of the Cloud Macchiato is luxurious and by adding espresso and our Starbucks signature caramel cross-hatch, we’re making it ours and opening up even more ways we can bring new beverage experiences to our customers.”

The Cloud Macchiato is available now in iced or hot versions at all Starbucks locations.

You will need:

Your fave lemon cake recipe (see ours below)

Red food coloring or fresh (pureed raspberries)

The perfect buttercream frosting (click here) + lemon extract + zest

Garnish (lemon wedges, raspberries, sprinkles, cute straws…you decide!)

The cake:

1 1/2 cup all-purpose flour

1/2 tsp. baking powder

1/4 tsp. baking soda

1/8 tsp. salt

1/2 cup sugar

1/3 cup frozen pink lemonade concentrate

3 egg whites

1/4 cup canola or coconut oil

1-2 tsp. lemon juice

1-2 tsp. lemon zest

1/2 cup milk

3 tbsp. raspberry puree (for the coloring)*

*You can also use red food coloring, about 3 drops, but reduce flour to 1 cup only

Step 1: Preheat oven to 350 degrees.

Step 2: Grease a 12-cupcake pan (or line with cupcake liners).

Step 3: Mix together flour, baking powder, baking soda, salt and sugar. Set aside.

Step 4: Whisk together egg whites, lemonade concentrate, oil, and lemon juice. Add milk. (Adding the lemon mix to the milk may cause curdling, which is okay because most recipes call for buttermilk. Adding the milk last helps cut down on this a bit). Add lemon zest.

Step 5: In a stand mixer alternate the wet mix and dry mix until well blended. (About 1 minute on medium speed).

Step 6: Add raspberry puree and blend for 2 minutes at medium speed until batter is smooth.

Step 7: Bake at 350 for 20-25 minutes (or until cupcake tops spring back when touched lightly)

Step 8: Make the frosting while the cupcakes cool.

The frosting: 

Use the recipe found here, but add:

1 tbsp. lemon zest

1/8 tsp. lemon extract

1 tbsp. raspberry puree* or 2 drops red food coloring

*You may need to add a little bit of extra powdered sugar to thicken the frosting once you’ve added the puree.

Step 9: Once the cupcakes have cooled, frost each cupcake. If you want it to look fancy, use a piping bag or Ziplock bag to add the frosting in a spiral. Or invest in a cupcake decorating tip-set, so you can look like you know what you are doing!

Step 10: Garnish with lemon wedges, sprinkles or a single raspberry and/or a small straw (just cut a paper straw in half) to make it look more “lemonade-y.”

Ingredients:
1 lemon
2 pints grape tomatoes
1 head garlic, cloves separated
1 cup pitted kalamata olives, halved
8 sprigs fresh thyme
2 tablespoons olive oil
1 3-pound chicken, cut into 8 pieces
kosher salt and black pepper
1/2 cup dry white wine
1 loaf fresh bread (optional)

Directions:
1. Heat oven to 425° F. Using a vegetable peeler, remove strips of zest from the lemon. (Save the lemon.)

2. In a large roasting pan, toss the tomatoes, garlic, olives, thyme, and lemon zest with 1 tablespoon of the oil.

3. Nestle the chicken, skin-side up, among the vegetables and drizzle with the remaining tablespoon of oil. Season the chicken and vegetables with ¾ teaspoon salt and ½ teaspoon pepper. Roast until the chicken is cooked through, 35 to 40 minutes.

4. Remove the chicken from the hot roasting pan. Squeeze the juice from the lemon into the roasting pan and add the wine. Gently stir, scraping up any bits stuck to the pan. Serve the chicken and vegetables with the pan juices and bread (optional).

Whether you call it Peri-Peri Chicken or Piri-Piri Chicken (toe-may-toe, toe-mah-toe, anyone?) this dish is undeniably tasty. The secret’s in the sauce, which hails from Portugal. Simply marinate the chicken in lemon juice and that zesty spice mix and you’ll end up with a meal that’s bursting with flavor. Throw in a side salad or rice, and you’ve got a weeknight dinner winner.

Serves 4

Ingredients:

1 packet peri peri spice mix (or make your own using paprika, garlic, onion, oregano, ground cumin, chili powder, thyme, chili flakes)
8 chicken thigh fillets (or mix of thighs and drumsticks, breasts, wings, etc)
4 cloves garlic, chopped
1 inch piece of ginger, chopped
1 lemon, zested
5 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon salt
1 lemon, cut into wedges (for serving)

Method:

1. Wash and dry the chicken and score each piece several times. In a bowl combine chicken, and spice mix.

2. Add garlic, ginger, lemon zest and salt. Mix.

3. Add olive oil and lemon juice. Mix until chicken is thoroughly coated.

4. Place in fridge for 1-2 hours (or more).

5. Preheat oven to 425 degrees F. In a single layer place chicken on a roasting tray and cook for 15 minutes. Flip chicken over and cook for another 15 minutes or until cooked through.

6. Serve with lemon wedges and salad/rice.
