Large egg roll wrappers 8
Olive oil As needed
Shredded cheddar cheese 1 cup(s)

Instructions

  1. Preheat oven to 350°F.
  2. Cook your hot dogs your favorite way. We suggest pan-fried with butter!
  3. While hot dogs cook, combine cream cheese, sour cream, 1 cup cheddar cheese, 1 cup Monterey Jack cheese, green onions, finely chopped jalapeños, and all but 2 tablespoons of the bacon in large bowl. Season with salt and pepper to taste.
  4. Transfer mixture to oven safe baking dish and top with remaining cheeses, bacon and sliced jalapeños. Bake 15-20 minutes, until cheese is melted and starting to brown.
  5. Slice hot dogs in quarters and serve with hot dip.

Eckrich® Skinless Smoked Sausage 16 oz.
Ziti or mostaccioli pasta 8 oz.
Jar spicy tomato basil pasta sauce 26 oz.
Ricotta cheese 15 oz.
Grated parmesan cheese 1/4 cup(s)
Chopped fresh basil, divided 1/2 cup(s)
Shredded mozzarella cheese, divided 2 cup(s)

Instructions

  1. Heat oven to 375ºF. Cook ziti according to package directions. Meanwhile, cut sausage crosswise into 1/2-inch slices; quarter the slices. Drain ziti; return to same pot. Add pasta sauce and sausage; mix well. Arrange half of mixture in a 13″x 9″ baking dish.
  2. Combine ricotta cheese, parmesan cheese and 1/4 cup of the basil; spoon over sausage mixture.
  3. Top with one cup of mozzarella cheese and remaining sausage mixture. Cover dish with foil.
  4. Bake 35 minutes or until heated through. Uncover; top with remaining cup of mozzarella cheese. Continue to bake 10 minutes or until bubbly and cheese is melted. Garnish with remaining 1/4 cup basil.

To those of you who haven’t gone into full “shelter in place” yet, 20 tips from your friend on the other side:

1. Your local pharmacy will feel like Saks on Fifth Avenue before too long. Going in here is a treat. Don some gloves, grab a trolley and saunter those aisles as slowly as you please. Bypass the toilet paper aisle, we both know it will be futile.

2. Your local grocery store will feel like Harrods Food Hall. Spotting a jar of pasta sauce and a packet of penne will feel like you’ve found a truffle under an oak tree. Savor the moment.

3. Don’t buy tins of tuna. Not even the dog will eat it.

4. Buy pencils. Lots of them. Preferably pre-sharpened. They don’t make sharpeners like they used to.

5. Open a Zoom account. Stat.

6. Get an Ipad stand so you don’t have to use family heirlooms to keep the Ipads in place during class.

7. Get your hair colored immediately.

8. Buy root spray. If you were too late for #7.

9. Get your nails done.

10. Buy nail clippers and a nail file. Learn how to use them.

11. Get your eyebrows waxed. And other parts if you need to.

12. Buy razors. See above.

13. Realize that by Day 7 things are going to start to fall apart.

14. Set up Zoom cocktail hours with your buddies. See above.

15. Get 30 minutes of fresh air a day. From a distance.

16. Get your neighbors email addresses and phone numbers and don’t be afraid to use them.

17. Clear out your freezer of last year’s “I’m sure I’ll eat that one day” leftovers and fill it with pizzas, frozen fruit and veges and bread. ALL the bread.

18. Buy ice cube trays.

19. Wash your hands every time you say to yourself “when will this end?”

20. Take comfort that the whole world is in this together and we will all triumph together. And then we will hug.

You know that point in the day when you already produced at least one nourishing, palate and-mind expanding meal? And you had to clean up. And then someone got irrational because you said “no more screen time” even though you say it all the time. Every. Single. Day. To add injury to insult, you can’t pinpoint exactly when you wrenched it, but your neck is definitely hurting.

So, here you are, it’s 5:30 p.m. and you’re facing the existential crisis otherwise known as “dinner.”

Anybody can look up a recipe on their phone, but that might look Instagram perfect and make you feel worse. And it goes without saying that you should refrain from watching cooking shows on TV right now. They’re aspirational and perfect for the right time of day, which this is most assuredly not.

Well, moms, dads and caregivers—we’ve been there and we’re here to help. You want easy? We have it. Ingredients likely to be in your cabinet? Check. We don’t call these recipes—we call them lifelines.

Here’s our list of five ideas to get you on to bath time, bedtime and beyond.

Ant’s Picnic

They fall for it every time. With just a little help from you so they don’t spill sticky mango juice all over the just-cleaned floor, they can assemble a group of yummy finger foods. If you have one of those “the carrot is touching the cheese” kids, just break out the segmented plate. (You’re welcome!)

Dinner can be as easy a few grapes, several nuts, string cheese, a turkey roll (deli turkey rolled up), a piece of whole-wheat toast and a carrot stick. Nobody’s picky when they made it themselves. Wink, wink.

Be Italian

White beans, olive oil and lemon juice. If you have sage, go ahead and get jiggy with it after you chop into microscopic pieces—the smaller the green stuff the fewer the complaints. If not, salt and pepper are fine.

Now, you’ve got a crostini topper (just make some toast), a bed for some canned or jarred tuna if they’ll eat that or a perfectly delicious pasta sauce.

Breakfast for Dinner

On a day like this, a few food groups are enough. Stop flipping out and flip a pancake or an omelet instead.

Taco Bar

If you can handle some drips and spills on the table, this can be quick and painless. Beans and cheese are the basics. Rice is optional. Left over chicken or meat can be cut up and heated easily. If you have an avocado, you’re in the big leagues!

Sauce in a Jar

Anytime you have about quarter jar of peanut butter left, make Pong Pong sauce right in the jar. Just add about 3 tablespoons each of sesame oil, tamari and rice wine vinegar until the consistency is just about pourable. If you have any, add chopped scallions, garlic,and ginger.

Trust us, it is yummy on any carb you can think of, from soba noodles to sponge cake. (Okay, that one’s gross.)

Get ready to be blow away. This recipe is the brainchild of Ramona at Kitchen Simmer, and it combines two of your kids’ favorite foods: spaghetti and hot dogs. Yes, really. Add in veggies like onions and bell peppers and the result is a delicious hearty meal that requires only one pot. Hooray for one-pot, easy clean-up meals!

Spaghetti hotdog Good Cook

Ingredients:
1 packet of hot dogs (I used good quality all beef hot dogs with no nitrates)
1 medium onion chopped (save some for garnish)
1 green bell pepper chopped (save some for garnish)
1 large jar of prepared spaghetti sauce
2 cloves garlic grated
1 tsp dried basil
1 tsp dried oregano
1 tsp sugar- if needed
red chili flakes to taste
salt and black pepper to taste
2Tbs canola oil

Garnish: Diced bell pepper, onions, Parmesan cheese

Method:
1. Cook pasta in well-salted water according to package directions. Drain and set aside in a colander. In the same pot, you cooked the spaghetti, heat 2 Tbs canola oil and saute onions and bell pepper with a little salt over medium heat.

2. When onions begin to soften add garlic, black pepper, dried oregano, dried basil and red chili flakes. Saute for another 2 minutes. Next, add the cut up hot dogs and saute for 2 minutes.

3. Next add jar pasta sauce, sugar (if needed) and adjust salt. Simmer with lid on for 15-20 minutes on medium-low heat. Finally, add cooked pasta and toss well in the sauce for 2-3 minutes. Garnish with onions and peppers. Enjoy.
