Nothing says comfort food like Chinese food. The Midnight Baker‘s soy sauce chicken is the perfect family dish, especially when hardest part is just waiting for the chicken to cook! Serve this with a side of veggie fried rice (or white rice and steamed veggies) to ensure a balanced meal. Read on below for the simple recipe.

Serves 4-6

Ingredients:
1 1/2 lbs bone-in chicken thighs (skinless is fine)
1 tbs oil
1/4 cup brown sugar
1/4 cup soy sauce
1/2 tsp dark sesame oil
1/2 tsp ginger
1 tbs rice vinegar (white is OK too)

Method:
1. Preheat oven to 375 degrees F.

2. Mix the brown sugar, soy sauce, sesame oil, ginger and rice vinegar in a small bowl. Stir until sugar is dissolved. Set aside.

3. Heat a large skillet over medium-high heat.  Brush top/skin side of chicken with the 1 tbs oil.

4. Place chicken, skin/top side down in heated skillet. Brown for 3-5 minutes–until chicken releases freely. Turn and brown on other side. Remove to plate; drain fat from skillet and wipe with a paper towel.

5. Place chicken back in skillet, skin/top side up. Pour soy sauce mixture over chicken.

6. Bake for 25-30 minutes, or until internal temperature of chicken is 170 degrees and/or juices run clear.

If nut-free, fuss-free and scrumptious is what you’re looking for in a dish, then this cold sesame noodle by the food blog, Chew Out Loud needs to be on your meal plan for the week. It’s a simple recipe full of rich sesame flavor and fresh veggies for a refreshing bite. Check out the recipe below.

Serves 4-6

Method:
16 oz dried noodles (spaghetti or linguine work well)
5 TB Asian toasted dark sesame oil (found in Asian aisles of grocery stores)
½ cup pure Tahini (sesame paste)
5 TB regular soy sauce
3 TB granulated sugar
1½ TB seasoned rice vinegar
1 tsp ginger powder
1 tsp white pepper
¼ cup hot water
1 large cucumber, peeled and sliced thin or julienned
1 large carrot, peeled and sliced thin or julienned

Optional: Cooked shredded chicken or cooked shrimp
Garnishes: Thinly sliced green onions, toasted sesame seeds, Sriracha on the side

Instructions:
1. Cook noodles in a large pot of boiling, well-salted water until tender, according to package instructions. Drain and rinse thoroughly with very cold water until all noodles are cool. Drain well. Toss with 2 TB sesame oil and set aside.

2. In a large bowl, whisk together the remaining sesame oil, Tahini, soy sauce, sugar, rice vinegar, ginger powder, and white pepper. Add ¼ cup hot water to thin out the sauce; whisk until combined.

3. Add cooked/cooled pasta, cucumbers, and carrots to the sauce. Toss well to combine. If using chicken or shrimp, add those and toss to combine. Garnish as desired. Serve immediately.

Here’s a new sweet treat for your family to enjoy: a gluten-free snack bar full of healthy ingredients like coconut oil, cranberries and oats. Courtesy of Debbie Adler of Sweet Debbie’s Organic Cupcakes in Los Angeles this simple recipe requires only six ingredients and lasts (almost) forever in the fridge. Now there’s definitely no excuse not to bake these bars for your little summer snackers.

Makes 16 squares

Ingredients:
Sheet of parchment paper slightly larger than 8 x 8 inches
1¾ cups gluten-free oats
⅓ cup all-purpose gluten-free flour
¼ teaspoon fine sea salt
6 tablespoons coconut oil
6 tablespoons maple syrup
¼ cup dried cranberries

Method:
1. Preheat oven to 325°F. Line an 8 x 8-inch square baking pan with parchment paper, with a little extra over the sides.

2. Mix together the oats, flour and salt in a large bowl.

3. Microwave the coconut oil and maple syrup in a measuring cup for 20 seconds and stir to combine. Pour the coconut oil mixture into the oat mixture. Fold in the dried cranberries.

4. Spoon the batter into the prepared pan and smooth it into the corners and on top with a wet baking spatula to cover the pan evenly.

5. Bake for 24 to 25 minutes, or until the oats are a light golden brown. Rotate the pan from front to back halfway through baking.

6. Remove the pan from the oven to a wire rack and let sit for about 15 minutes before putting in the freezer for at least 1 hour.

7. Transfer the parchment paper to a cutting board and cut into 16 bars or divide and roll into 1-inch balls.

8. Wrap each bar or ball individually in parchment paper or bakery tissue paper, place in sealable plastic bag and keep frozen until ready to pack, eat or gift.

3. Sprinkle cheese and layer over with thinly sliced veggies and lunch meats. Lightly drizzle with olive oil.

4. Bake til the base is browned and crispy and the cheese is melted.
