It’s peach season. Use this seasonal fruit to sweeten up your ice pop. Marlene from On a Sweet Sugar Rush blog tells us that the sweet peach and the tangy yogurt balance each other well and a little honey and vanilla adds a depth of flavor.
Makes 6 popsicles
3 peaches, halved and pitted
2 Tbsp honey (or more or less, to taste)
1 cup greek yogurt
1 tsp vanilla extract
1. Roast peaches on a baking sheet cut side down in an oven at 325 F for 45 minutes.
2. Peel the peaches while still warm and mash with a fork until you reach a consistency you like. Let peaches cool completely.
3. In a bowl mix honey, vanilla, and yoghurt. In a separate bowl mix half of yoghurt with half of peach mixture.
4. In alternating layers pour the three mixtures into popsicle molds and secure sticks. Freeze for 4-6 hours or overnight.
