What is the best part of chili besides a bold flavor? The possibility for left overs! This chili uses ground turkey and parents will love the easy clean up of a one pot meal. The flavor is fabulously kid friendly because it isn’t too spicy, but spice can be added or subtracted based on taste. You also probably have most of the ingredients in your cupboard or freezer already, and the things you’re missing can be easily picked up on your next grocery store run.
2 Tbsp. canola or vegetable oil
1 package of ground turkey (about 1 pound)
½ cup chopped onion
1 tsp. minced garlic
½ cup BBQ sauce
1/3 cup tomato sauce
2 Tbsp. brown sugar
1 tsp. chili powder
1 can red beans, drained and rinsed
1 cup corn (frozen or jar is fine)
¼ cup crumbled bacon (optional)
Salt and pepper
1. In a large Dutch oven pot, heat the oil. Add to it the onion and garlic, and sauté until translucent. Add the ground turkey to the onion and garlic mixture and cook until the meat is no longer pink.
2. To the ground turkey mixture, add BBQ sauce, tomato sauce, brown sugar, chili powder, and bring to a boil. When the mixture is slowly boiling, add the red beans, corn and bacon (if desired). Let the chili simmer for 15-20 minutes for all the flavors to cook together.
3. Turn the heat to low and season with salt and pepper to taste. Serve the steaming chili into bowls with brown rice or serve with a slice of cornbread.
