Veggie Stuffed Baked Potatoes
Instead of piling your baked potato high with sour cream, butter and every sort of artery clogger, we suggest stuffing it with veggies. Ok, you can add a bit of butter (hey, everyone needs a little bit, right?), but you’ll really want to stockpile this potato with any sort of vegetable. It’s great because you can use any green you have in your fridge, and your kids will love crumbling some cheese over their creation and then devouring it afterwards. Click here to see the recipe.
