Veggie Stuffed Baked Potatoes

Instead of piling your baked potato high with sour cream, butter and every sort of artery clogger, we suggest stuffing it with veggies. Ok, you can add a bit of butter (hey, everyone needs a little bit, right?), but you’ll really want to stockpile this potato with any sort of vegetable.
