Food blogger, mom of three and regular TODAY food contributor, Siri Daly is all about making parents’ lives a bit easier in the kitchen. Here she shares with us her recipe for perfect banana mini muffins.
Siri tells us: To claim a recipe is “perfect” well, it better be that. These muffins are just sweet enough, soft and fluffy and bursting with banana flavor. They are miniature sized, which makes them a convenient breakfast on-the-go or mid-day snack, and you can have them ready to pop in the oven in just ten minutes. See? They are perfection. You will need a mini muffin tin for this recipe, which is one of my favorite kitchen items, but if you’d rather make regular-sized muffins simply increase the baking time by 6 minutes. Look around. . .I’m sure you have ripe bananas on your counter like I always seem to, and now you know what to do with them!

Total time: 25 mins.
1 cup granulated sugar
1⁄2 cup vegetable oil
3 small ripe bananas, mashed
2 teaspoons vanilla extract
1⁄2 teaspoon fresh lemon juice
2 large eggs
1⁄2 cup whole milk
2 cups all-purpose flou
1 1⁄2 teaspoons baking powder
1⁄2 teaspoon kosher salt
1. Preheat the oven to 350°F. Whisk together the sugar and oil in a large bowl until smooth. Add the bananas, vanilla, lemon juice, and eggs, and whisk until smooth. Add the milk; whisk until smooth.
2. Stir together the flour, baking powder, and salt. Add the flour mixture to the banana mixture, and stir until just combined. You don’t want to over-stir or you’ll have dense muffins.
3. Coat 36 cups in miniature muffin pans with cooking spray. Spoon 11⁄2 tablespoons of the batter into each cup, filling about three-fourths full. Bake until a wooden pick comes out clean, 12 to 14 minutes. Let muffins cool in the pans for 2 minutes. Remove from the pans to wire racks. Enjoy!
